Christmas Inspired Panini

Sometimes I use the color of food to inspire me. There’s something about putting together certain colors that just seems completely satisfying in both the taste and sight departments. Today I was driven by the classic Christmas colors of Red and Green.

I picked up a couple of avocados during my last grocery store trip thinking they would be a good addition to my diet, especially while pregnant. Read the rest of this post »»

Deep Dish Crescent Pizza Casserole The Video!

We’ve been severely slacking in video department here on GreenLiteBites. Blame the pregnancy and my new kitchen but I just haven’t been able to find my video groove lately. We are going to try to get back to our once a week recording sessions in the new year. Read the rest of this post »»

Idea: The Simplest Slow Cooker Beef Ever

I may be married to the only man in America who doesn’t like beef stew. Seriously, you will have to let me know because I can’t imagine NOT liking only one of the most amazing comfort foods ever! My mom always made it with potatoes, carrots and beef. The sauce was thick and we’d dish out bowl after bowl at dinner.

When I make it, regardless of how, he pokes around the carrots, eats maybe one potato and devours the meat. The beef really is the only thing he eats. Read the rest of this post »»

Cheesy Salsa Tuna Burgers

Craving alert! Well, not really a typical pregnancy craving. It was more like a desire to eat a warm healthy lunch, kind of craving.

I don’t have much in the house in the way of fresh produce at the moment. I used all my spinach in the Turkey Spinach Lasagna Roll-ups, I don’t buy tomatoes off season (except for a pint or two of grape ones for snacking) and my CSA (the farm) season is over. :( Read the rest of this post »»

Chocolate Almond Macaron-ish Halves

I’m not a baker. You’ll be able to tell with this recipe and my lack of basic baking equipment like parchment paper and piping bags. Don’t get me wrong I find baking fun but honestly, I’m a rebel in the kitchen. I don’t follow recipes or recommended cooking techniques. I simply don’t believe there is a “right” way of cooking. If I cook it and I like it, it’s “right.” End of story, case closed.

And an empty cookie tin means… Read the rest of this post »»

Turkey Spinach Lasagna Roll-ups

Or what I really want to call, the I-don’t-have-enough-of-any-one-ingredient lasagna. Here’s the story, I had a pot of homemade sauce I made a full days ago. Normally we go to town and just have pasta for like 4-5 days in a row. The Little Guy and I stick with varying shapes of whole grain and the Husband to his boring old non-whole grain rigatoni. The only pasta shape he eats besides spaghetti.

There was only one problem, I ran out of rigatoni! Such a catastrophe in the husband’s eyes but for me… Read the rest of this post »»

Pantry Rice

Sometimes I make things and wonder — Am I the only one who would like this? Maybe my tastes aren’t as picky since I’m the chef.

Last night I had 20 minutes to whip together dinner before running errands with the family. I had fish defrosted and I wanted a rice based side dish. I love rice and fish. It’s such a classic combo but sometimes not a very filling one. Plus I only had 1 filet of fish for each of us. Read the rest of this post »»

Potatoes, Sausage and Cabbage in the Slow Cooker

I STILL haven’t gone grocery shopping since before Thanksgiving. Do you believe it? I just haven’t had the time and frankly, I don’t want to spend the money. Between traveling this weekend and Christmas shopping I’m spent in both the time and money department. Ahhhh gotta love the Holidays! note: Actually I DO love the holidays.. I’m just whining. :)

Anyway, I knew yesterday was going to be a busy day so I decided to pull out the old crockpot. Read the rest of this post »»

Shrimp and Pea Pasta

I whipped this up the other night for dinner in a bit of desperation. I really haven’t grocery shopped since before Thanksgiving and even then I was only buying stuff for the holiday. So my stocks are down. Once the leftovers were gone I really had nothing left to make for dinner.

I scoured the freezer and pantry and found a pound of frozen shrimp, a bag of frozen peas and of course there’s pasta in my pantry. I always keep whole grain pasta on hand. I find pasta the easiest thing to use when whipping up a fast dinner. Read the rest of this post »»

The "I Almost Nailed Them" Roasted Butternut Squash Muffins

You guys know me by now. I share my successes AND failures. Anyone remember this one? It still makes me laugh.

Anyway, today I attempted to make Roasted Butternut Squash Muffins. I’ve been craving muffins something fierce plus it’s been awhile since I had some alone time with my kitchen. What can I say, sometimes I just need to bake. Read the rest of this post »»

Turkey, Leek and White Bean Stew

My initial idea to use the remaining leftover Thanksgiving turkey was a white chili, but then I realized I didn’t actually have any chilies, or peppers for that matter. So I’ll call this a “stew” instead. Whatever it is, it was GOOD! I knew I’d be the only one eating it so I decided to spice it up a bit. Topped with just a bit of colby/jack cheese and some fresh cilantro, it was a warm bowl of goodness on a cold rainy day. Read the rest of this post »»
