    Quick Whole Grain Banana Pancakes

    Yesterday was my first breakfast with the toddler in a week and I wanted to make something special! Staring at some brown bananas and about nothing else, this is what I came up with and.... it WORKED!

    They were delicious! The toddler devoured them with just a bit of syrup. Just look at him, how cute? I couldn't pick so I posted all three pics.

    I chose a smear of low sugar strawberry jelly and a handful of blueberries. Not a bad 2 point breakfast, is it? ;~)

    Ingredients

    • 1 large overripe banana
    • 1 egg
    • ½ cup (4oz) skim milk
    • ½ teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon ground nutmeg
    • ¾ cup (90g) whole wheat flour

    Instructions

    Mash the banana in a medium bowl. Add the egg and milk. Whisk until frothy.

    In a smaller bowl, add the flour, baking soda, baking powder and nutmeg. Sift into the banana mixture. Mix until just blended.

    Pour batter in a non-stick skillet or griddle over medium heat sprayed with non-stick cooking spray. Cook about 1-2 minutes a side, small bubbles will form but not as many as traditional pancakes. I just peaked underneath for a light brown color, then flipped.

    09/13/08 Update: I didn't have milk and replaced the ½ cup milk with ¼ yogurt. The batter was super thick (mostly because I forgot the ¼ cup water) but they came out delicious in the waffle iron!

      If these pancakes were dropped on either side of a war, enough for every person to have a pancake, all fighting would stop until everyone finished their pancakes.

      He was probably in heaven when he ate them. I would be in heaven to I mean pancakes are good as it is. Put maple syrup on them and your in heaven.

      I made these this morning, and they were aboslutely amazing! I had a really over-ripped banana that I used and my pancakes were so sweet and delicious! They melted in my mouth! I used soy milk instead of skim, and they turned out so fluffy! I will definetly save this recipe, because these are amazing! :d

      I'm not sure what you are asking. I only use Whole Wheat Flour. There are no oats in this recipe.

      Finally an wonderful and simple, most important FILLING pancake recipe. Topped mine with strawberries (which I froze and thawed, they made their own syrup). Going to freeze the extras for quick breakfasts. Delicious. Thanks Roni!!

      You don't have pancake day??! You Americans are missing out! For us, Shrove Tuesday, or Mardi Gras, was traditionally the day when you use up all your fattening things - eggs and butter etc - before fasting for Lent. So, pancakes! Now of course we just eat pancakes and forget about the fasting after 🙂 They even have races with frying pans to celebrate. Cool no? I think you should start a new tradition!

      I just joined weight watchers and I made your Quick Whole Grain Pancakes this morning but I noticed the WW Points are from June, 2008. I am such a newbie..I don't know how to calcuate the points. Would you be able to help me. They were very good. I really, really, really like your website and recipes.

      I made these today, subbing canned pure pumpkin for the ripe banana. They turned out super moist and fluffy. I have made them in the past with the banana, and they are delicious that way as well. 🙂

      nothing special.. your batter just may be too thick. Try a bit more milk or even a splash of water.

      Those look great and would be a great go-to freezer item! I have a tip about freezing bananas...I puree them in the food processor and freeze the puree in ice cube trays. After they are frozen I store the nanner cubes in a freezer bag; it takes around 5-7 cubes to make one banana in a recipe, depending on the size of your tray. I buy the "too ripe" bananas at the store for half price and freeze them. It's easy for me to use half a banana in my smoothies this way. I *ADORE* your site! It has helped me more than you could ever know! Thanks a million!

      Hi Lindsay! I usually use about 1/8-1/4 of a cup bur rarely measure. You can really make them any size you want, just adjust the nutritional info based on the total number. Hope that helps!

      I just have to thank you, Roni, for this great recipe. I make a big batch of waffles and freeze them at least 2-3 times a month. I pop them into my toaster oven, get the toddler in the car, and "share" my breakfast as we run errands. He loves them and I know they are healthy. Thanks again for sharing.

      I had some over-ripe bananas sitting on my counter and kept trying to think of what to do with them....we've exhausted the frozen banana and banana bread routes...and then I remembered you had these. They were a wonderful alternative to our normal Sunday breakfasts and a great way to use the bananas. I'm on a "waste nothing" mission for the next two weeks....no eating out...and eating only what is in our kitchen....so I'll be frequenting this site for ideas! Come up with some more bulgur recipes in your "spare" time 🙂

      tried these today and they were good but i didnt have rip bannana and tried to use one not rip not recamended you can really tast the un rip banana will do this again when the bananas are rip now whats for dinner lol i love this site i use it at every meal now thanks roni im a man that cooks lol

      Ok, I did not have a banana but after reading this I was in the mood for pancakes so I substituted 1/2 cup of unsweetened applesauce and some blueberries I had in the fridge. They were great. Also, I do not have children and my man only eats cereal or egg white omelets so I froze the rest for later. They freeze well and now I can have them anytime. Thank you for sharing all your great recipes, Roni.

      YUMM-O!

      When you posted this, I just happened to have 1 brown banana sitting on the counter. "What am I gonna do with 1 brown banana?" I thought to myself since my current favorite banana muffin calls for 2-3 bananas. When I saw this post...I thought it was perfect. So I made them this morning with my lone banana to celebrate the first day of summer vacation for my son. The kids all enjoyed them. (I used cinnamon instead of nutmeg.)

      I love that you get a good sized pancake for just 1 point...usually they're 2 or 3 per.

      Hubby won't like them because he hates all things with baked banana. But it's got me thinking...applesauce instead of banana? I'm gonna hafta try that.

      Melissa - Eggs in a carton creep my out. It's a personal problem I have. LOL So I rarely use them.

      Rebecca - Thanks for catching that!! I don't know where my head was!

      I did use 90grams, but nutritiondata still lists the grams for a full
      cup (120) even though I listed .75 of a cup. I wasn't paying
      attention.

      Another winner. I made these with my 6 year old this morning and we both loved them. She had hers with a dollop of banana cream pie yogurt and strawberries. I do have one observation on your ingredients. You wrote 120 gm of whole wheat flour or 3/4 of a cup. Both of my bags of whole wheat flour show 30 gms as a 1/4 of a cup so 3/4 of a cup would be 90 grams. Am I confused on the amounts. Still yummy and will definetely make them again.
      My daughter wanted to make them because "little Ryan" was eating them. She was disappointed that there was no video for them.

      These sound great. I was wondering about your thoughts on egg substitute. I discovered it a few months ago and we just about live on it. I actually think they taste better scrambled than real eggs. Thoughts?

      These look great. I think I found the best pancake recipe yet! They sound so easy. I've found ones with "different" ingredients (cottage cheese - not a fan)or ones that make alot of servings (9 in a great number). Plus I think these might remind me of my Grammy's banana bread. I will have to try these over the weekend. Maybe add some chopped pecans.

      * I saw the poster before me used Pumpkin pie spice. I thought I wonder if you could sub the banana with pumpkin.

      LOL Believe it or not...we've missed Ryan too! 🙂 Glad he is home, and glad you were snap happy!

      I made my own similar version of whole wheat pancakes for dinner last night! It was one of those nights we were all in and out of the house at different times, so pancakes were something all the teens could cook on their own when they had time. We love breakfast for dinner! And for breakfast!

      Ohmygosh Roni! The toddler is gone for a week and he looks like a new boy (yes I said boy!) in those pictures! He is growing up so fast! I think maybe it's the longer hair that makes him look about five! Too darn cute! Glad to hear the Roni/Ryan team is back in action and that your recovery is going well! 🙂
