This may be my simplest idea yet, but it was so tasty and satisfying I had to share. Plus you guys know I'm a Laughing Cow Community Leader so I'm all about sharing fun ways to use their products.
You guys may also know how I feel about pausing and making a snack versus just grabbing something out of the pantry and munching. Sometimes--ok, ok a lot of the times--I have a habit of grabbing a bag of chips, a container of salsa and going to town.
Tonight I decided to take control of the snack attack and I swear I'm way more satisfied on a quarter of the calories. Here's what I did…
Ingredients
- 1 wedge of The Laughing Cow Light Queso Fresco & Chipotle
- 4 tablespoon of your favorite salsa (62g)
Instructions
Unwrap the laughing cow cheese and place it in a small bowl. Microwave it for about 20 seconds and then stir. It should get all warm and melty.
Add the salsa to the melted cheese and stir.
It's really that simple!
What you get is a nice size serving of salsa with that cheesy mouth feel that is oh so satisfying. I served it with some PopChips for an awesome snack totaling a mere 155 calories.
I'll totally making this again to cure my late night munchies!
