    Tasteful Selections contacted me and asked if I'd be willing to try their small colorful potatoes. "Of course!" I said. I am NOT one to turn down potatoes, ESPECIALLY while pregnant. 😉 (Have totally been craving potatoes)

    I was excited to get my two bags in the mail the other day and decided to make a simple roasted dish with them. The colors were amazing. There were red, yellow, and my favorite, purple! Each one no more than and inch or two in diameter.

    I halved them to cut down on cooking time and presented the husband and the toddler with their rainbow plates. Now... of all the complaints I have of the husband, NOT being a true potato man is my biggest gripe. If it was up to him potatoes would only come in 1 of 2 ways: baked and mashed. That's it. He doesn't even like HASHBROWNS!! I mean who doesn't like a good hash. Ugh.

    Anyway, before this turns into a bitch session I shall move on. He ate all the potatoes except one purple one and seemed unimpressed. Me, on the other hand, could eat these things every day for the rest of my life and be happy! They were amazing! Creamy, roasted goodness.

    The toddler even thought so. He was a little hesitant at first (the purple ones were intimidating) and then continued to eat the whole serving without complaint.

    Here's what I did...

    Ingredients

    • 450 grams of small colorful potatoes halved (package said 148 was a serving and I didn't want to make more than 3 in fear I would not stop eating them. I was glad I made this decision. 😉
    • 4 carrots, cut in chunks
    • 1 small onion, chopped small
    • 1 tablespoon olive oil
    • 2 sprigs of fresh rosemary (a sprinkle of dry would work great too)
    • Kosher Salt

    Instructions

    Preheat the oven to 425 degrees.

    Toss everything together in a bowl using a liberal amount of kosher salt. I think I used at least 3 pinches from my bowl. Pour all the ingredients in a baking dish and bake for 45-50 minutes until the potatoes are fork tender. I tossed and stirred 3 times during cooking.

    Seriously. The best potatoes EVER! You could always use "regular" sized potatoes and quarter them, BUT if you would like to try the Tasteful Selection small colorful variety why, all you need to do is leave a comment and tell me what your favorite potato dish is! I'll pick a random commentor next Wednesday to sample these fabulous potatoes.

    As for nutritional information, I made exactly 3 servings so that's how I'm calculating. You can totally double, triple, quadruple this recipe for more. I wouldn't up the oil too, too much. I could have even used a little less for this batch.

      I LOVE potatoes! My husband is the same way as yours- in fact, he thinks they are evil. Being vegan, they make up a great part of my diet, often. I love all kinds of potatoes, and will often have a big ole sweet potato for dinner!
      Thanks for the pretty picture.

      Also, if you don't eat all of your roasted veggies, puree them with some good quality vegetable broth for a fabulous soup . ..

      I was looking for these potatoes for 4th of July, I saw a recipe for Red/White/Blue potatoe salad, and thought it would be neat to make em, but couldn't find them last July, I love the looks of them roasted. Gotta try them that way soon

      I think I'll eat a potato in just about any form, but for me my favorite way to eat them is fresh from the campfire. Baked over the campfire wrapped in foil. When it's just about done cut it open to put on a bit of salt and butter. The argument might be it's still just a potato, but I think everything tastes better surrounded by fresh air and friends. 🙂

      Favorite potato dish? While I was doing Atkins, I'd have said none. Nowadays, I'm back to eating lots of potatoes. I love hash browns, but I eat most of my potatoes as "fries," cut into fry shapes and grilled on George.

      I like to thinly slice potatoes and onions and layer them in a baking dish with a little parmesan cheese and garlic powder sprinkled between the layers, then covered in melted butter and baked.

      I LOVE itty bitty potatoes. Our favorite way to cook them is very similar to your way. I usually leave them whole and just roll the whole pan of them in a bit of olive oil and then shake garlic salt, lemon pepper and dried parsley all over them. 425ish for about an hour and yum. I really hate cooked carrots so I think I'd leave them out if I tried your recipe... but I might be curious enough to put one in and see how I feel.

      We grew these potatoes. Ours were suppose to be red white and blue. But they were more like red, purple & yellow. We bought the seeds from Peaceful Valley. They taste good and they really make a colorful dish. I gave some to a friend and her 4 year old daughter loved the purple potatoes! Thanks for sharing the great recipe.

      I have a whole blog on the purple potatoes!!!! They're called the SUPER SPUD because they're SO full of anti-oxidants! We buy them special here, THANK GOD FOR WEGMAN'S for about $1.59 a pound (yes that's a tad expensive but seriously these babies ROCK). They do sell a bag of "fingerlings" which include some purple or aka "blue" potatoes too but honestly I've never even priced them.

      So your purple potatoes were not only delish but VERY good for you!

      There's NOTHING better in the fall and winter months than a good hearty potato dish! BTW...I craved potatoes and apples with my first daughter! LOL My hubby would come home to me making pots upon pots of mashed taties every day! He'd say "what'd you have for lunch?" and my answer was always the same ... potatoes. LOL

      Potatoes...I'm not picky! But since you said pick your favorite...I'd say roasted. I like them a little crispy on the outside but tender on the inside. Yummy!!

      Roasted with the "shell on" as my daughter calls the skins. olive oil, salt, pepper, garlic & onion powder, italian seasonings, and sometimes a dash of rosemary.
      bake until soft and then under the broiler to crispen up.
      Kids cant get enough of them, great way to get their iron too! 🙂

      These look interesting! I love potatoes - in all ways you can make a potato. My favorite is just quarters of white potatoes boiled and mustard on the side for dipping. Booooring, I know, but my Irish palette has a soft spot for plain food 🙂

      My favorites are sweet potato fries (that they make at work), and roasted potatoes with garlic, olive oil, s&p, crushed coriander, and coarse mustard. I like that they seem a little exotic yet are very easy.

      I got some purple potatoes at the last farmer's market of the season - think I'll try your recipe. Thanks!

      I discovered roasting a mixture of winter vegetables about 8 months ago and I think that is my new favorite. I also like my garlic mashed potatoes and steamed red potatoes with parsley and a little butter.

      My favorite potato dish was a mashed white potato and mashed sweet potato 'swirled' casserole I made one year for Thanksgiving. Didn't make it again because it didn't require gravy and the family wants traditional mashed with gravy on Thanksgiving!

      those look sooooo good!!!!! my favorite potatoes are mashed and a way my mom makes them it may sound strange but we fry them with little oil cut them small add onions and tumeric a chile pepper and tuna i know weird but my favorite dish ever

      This is such an eye catching dish and I'm just drooling at that purple potato.... And it looks like you served it with salmon (Your breaded salmon is one of two ways I will eat it, the other is microwaved with mayo, wasabi, and teriyaki sauce. I'm such a dork).
      I'm about to pop a whole chicken in the slow cooker over night to see if I can make an amazing stock and make a bbq pulled chicken or something.

      I don't discriminate against potatoes, so I can't tell you my favorite dish... but I can tell you I make a MEAN mashed potato! I used chicken broth, cream cheese and butter and a splash of milk.... hummmmm now I want some!!! I bet these would make some FUN mashed potatoes!!! :o)

      My favorite way to eat potatoes is roasted, especially small ones like that. And just simply tossing them with a bit of olive oil and salt and pepper and putting in a high-heat oven...what could be simpler? And my boys and husband always rave, as if I'm a genius. I'd love to try these colorful taters!

      I love potatoes just about anyway you want to cook them! Maybe I like potato salad the best. No, maybe mashed. No, Just plain baked with oil and salt on the skin to make it dry and fluffy! Oh well, who can choose? Gotta love the potato!

      Soooo yum! I've been wanting to try purple potatoes!

      My preferance is sweet potatoes, but where "regular" potatoes are concerned, my favorite is still mashed. Once upon a time I made mashed potatoes with parmesan cheese and it was AMAZING. And then this past weekend I happened to have heavy cream on hand while I was making mashed potatoes, so I gave that a go instead of the usual 1% milk or fat-free half-and-half. Also AMAZING. Sometime if I'm feeling frisky I might use parmesan AND cream! 😉

      I have never met a potato I didn't like. What can I say? I'm a good Irish girl! We eat a lot of potatoes because they're so good and good for you! I cut them out of my diet for years because I thought they were what was making me fat. Ummm... two years later and more pounds heavier than I'd care to admit... clearly it wasn't JUST the potatoes. I missed potatoes and am so glad to have them back!

      Those look so good! My favorite way to have potatoes is mashed, but another favorite of mine is one that I recall from childhood that my mother makes on occasion. It's boiled potatoes, quartered, mixed with my grandmother's homemade pickles and sliced onion. The combo is an acquired taste, but as I write this, I'm craving it more and more.

      My fave potato dish is both good and bad. One is similar to yours above and is roasted potatoes tossed with olive oil and onion soup mix (the powered packet one). I like this for a casual family dinner and it's always a crowd pleaser. The other is called Texas Potatoes and involves large doses of butter, sour cream, and cream of chicken soup. I make it lighter by using fat free everything, but it still packs a whallop! SOOOO good though...an Easter fave (and that's the only time I eat it.)

      Definitely homemade baked french fries! Just some simple white potatoes, sliced and dipped in a mixture of egg whites and spices (I use Emeril's Essence - salt, pepper, garlic powder, onion powder, paprika, cayenne, oregano, and thyme). Put them in the oven for a bit and they come out great!

      My favorite potato dish would have to be my future mother-in-laws' Bolivian potato salad. It is the most simple recipe ever, but the combination is perfect. All it is, is potatoes, carrots (both cut into small bite-sized pieces) a little bit of mayo, salt, and pepper. Paired with grilled chicken or steak and a tomato onion salad and you have a filling dinner.
      But let me tell you, I will take a potato in any form!!

      I'm Irish, Roni...do I *really* have to pick just one fave potato dish? 😀

      I absolutely love an old fashioned baked potato made in a hot oven...rub the skin with oil, sprinkle of salt, prick the skin a few times and throw it in for an hour. The result is crispy skin and a fluffy interior. Bliss!

      I like 'em, but my 9 yr old son, loves them...more than any other food (more than candy or ice cream etc.) and any style is fine...baked, mashed, in soup, of course fries, but we try to limit that...he'd get a kick out of the different colors.

      These potatos look beautiful!
      I love this dish my mom used to make - slice the potatoes and boil them in a fry pan until soft. Drainthe water, then add oil/butter and seasoning (onion, salt, pepper) and fry until delicious! I usually make this with regular white potatoes, but would think it be nice inthe great colors!

      These are beautiful. As simple as it is, I'd say that basic fries are my favorite potato dish. But some smashed potatoes with rosemary is pretty darn good too.

      I love roasted potatoes, those colors are so pretty I bet they would make a colorful potato salad too! Also, I'm with Ryan and think it would take a minute or two to get past the purple;)
