I've been OBSESSED with cheese lately, craving it something fierce.
Now, you may be thinking… what's the big deal? Just eat some cheese. But I'm here to tell you, I have a cheese problem.
Once I start, I can't stop.
Don't laugh.
I'm SERIOUS!
I haven't bought a block of cheese in nearly 6 years because of this problem. I used to sit down with a hunk of cheddar, a knife and some crackers. Before I knew it, *poof* ¾ the block would be gone
Now I stick with mostly pre-shredded cheese and the Laughing Cow. Both help me with some much needed portion control.
Sad, I know.
If you've been following me for some time, you probably know my snack philosophy--It's always more satisfying to make than to grab. I needed to find a way to appease these most recent cheese cravings.
I could have easily grabbed a Mini Babybel, ate it in 2 seconds, but then where would I be?
Left. Wanting. More. That's where.
Instead, I took a few minutes, looked in the pantry for nuts, grabbed some fresh mint from the garden and had fun trying a completely new flavor combination for me. And it was interesting, in a good way! You get the creaminess from the cheese, the sweetness of the blueberry, the saltiness of the pistachio and finally the bright freshness from the mint!
Ingredients
- 1 Mini Babybel Light
- 9 blueberries
- 9 pistachios
- 9 fresh mint leaves
- 9 tooth picks
Instructions
Cut the Mini Babybel into 9 small squares and build 9 little "bites" by layering one of everything on each toothpick.
Enjoy!

I just from somewhere found your site an wanted u to know i am now excited about losin my weight again. In 07 i joined weight watchers an in 3 months lost 38 pounds. But life hahaha made me gain it an some back, but i'm on the Roni train, focused, excited an actually feelin better. Your site is awsome an i luv that your son is involved. Oh I've been craving brie with red pepper jelly and red wine all week. ALL WEEK. Waiting for day 7 on WW to use my flex. This is such a PRETTY food photo, I would totally serve this at a party (with select friends who actually eat healthy and would go for something new). Love it! Try gorgenzola cheese (spelling?), craisin, endive (can be used as a scoop instead of toothpick) or arugala, and walnut. Amazing.

Oh, I so recognize your cheese obsession. I try to buy string cheese so they are in single servings but then I eat five or six a day. I stick with Laughing Cow too.
