    Chocolate Ricotta Rolls

    I've been DYING to share this idea with you. It's my new favorite snack! 🙂

     Here's how I made the batch in the video. Remember, take the idea and run with it! 🙂

    Ingredients

    • 6 won ton wrappers
    • ½ cup fat free ricotta cheese (124g)
    • ¼ - ½ teaspoon stevia powder (or other sweetener to your tasting)
    • ¼ teaspoon cinnamon
    • ½ teaspoon cocoa powder
    • ¼ teaspoon almond or vanilla extract
    • dusting of cocoa powder, stevia or powdered sugar for dusting

    Instructions

    Preheat the oven to 350 degrees.

    Roll the wrappers into tube shapes sealing with a bit of water. Stand them upright on a cookie sheet and bake for 10-12 minutes. (see video for demonstration)

    Mix the ricotta cheese, stevia, cinnamon, cocoa powder.

    Plop the cheese mixture in a ziplock bag, snip off the corner and fill won ton tubes.

    Sprinkle with cocoa powder and stevia for effect. 🙂

    Treat yourself to some heavenly chocolate ricotta rolls! These flaky pastries are filled with a rich and creamy chocolate ricotta filling that is simply irresistible.

      Honestly don't know how you made them stand up...each time the oven comes on, it blows them over. Tried standing them up in a canning ring but that didn't work either. Out of 10 tries, 3 stood up. Disappointed!!!!!

        You could make them laying down too. Sometimes you just need to get creative. Sorry it wasn't working for you. As you can see I didn't do anything special. I also have made these in over 5 years! SO thanks for the reminder. 🙂

      How wide are you making them? The wider they are the easier they stand. Did you watch the video? Starting around 4:15 I make them and you can see my techinique.

      Yum! These were so good. I made these exactly like you did in your video about a week ago. I loved them but today I wanted something a little different and still had a bunch of wonton wrappers and one left over banana I needed to use. I wanted to make 12 so I doubled the ricotta amount you suggested and added the mashed banana, a little vanilla extract and some splenda. I topped them with fat free whipped cream. Wow! It was sooo good! Thanks for your wonderful website!

      Well here it is 9:30 at night and I come across this recipe, I had everything but the Wonton, so just made up 1/2 recipe in a bowl and eating it while I'm writing this message, OMG it hit the spot for something sweet, I just couldn't believe how well it tasted, now will try with wontons on my next shopping trip.       I tried these tasty little guys last night for dessert. They were very quick and tasty. I changed the ricotta cheese filing to a dream whip with cocoa powder mixed it. I was high on my points and wanted to cut a few calories. Now the only thing was, mine did not look as nice as yours. What is your secret for them keeping their shape. Some of my caved in a tad.

      First video I've watched, and aren't you just the little cutie patootie? LOVE the idea, I'm a huge fan of those wonton wrappers, and I'm always looking at new ideas to use...plus I never thought to put them in the freezer! Plus I haven't tried the stevia yet, but just got a sample in the mail...looks like I've got a reason to try it now!

      I made these yesterday and they turned out really good. The husband was a bit disappointed they weren't more "chocolately", but he liked them nonetheless. Next time, I think I may add a bit of mini chocolate chips to give it some more chocolate taste.

      Nicole - Sorry I missed ya. I'd go with a packet or about tsp of splenda, taste it and then add more to your liking. I made mine less sweet. You'll have to find what works for you.

      Nicole - I've heard that Splenda is 100 times sweeter than sugar and other substitutes. I would suggest adding just a little and tasting it. You can always add more, but it's really hard to take out once you've mixed it in.

      I made these this weekend and they were great! Next time I'm going to cut back on the vanilla extract. Maybe mine is old, but it gave it a very strong alcoholy taste. I also threw a few wrappers in the oven covered with a little Pam, cinnamon and stevia. What a wonderful crispy, sweet treat.

      Wow Roni! I just made these yummy creations and they were just delicious! I have to say, I've always been intimated by won-ton wrappers and have never tried to do anything with them. After watching your video yesterday, I went to the store and followed your directions. Wow! I just ate all 6 of them for 5 points, but it was well worth it! Just yummy, delicious, so cute and very satisfying!!!!!! The only difference that I did was to eliminate the cocoa...I just wanted to try a cheese-cakey thing and it worked really really well!!!! Thank you so much for this recipe and for all of your hard work. I've been following you for over a year now and you are an inspiration...truly!!!

      Totally weird, but my markets don't carry fat-free ricotta! I could have sworn I saw it before, but all I can find is low-fat, which I got and will be trying these this weekend!

      Where I live I can only find the wonton wrappers in boxes in the freezer section of any grocery store, so those of you who can't find them in the produce section might want to take a look at the freezer section with the other asian frozen food.

      I just made these... tweaked the recipe a little based on what I had in my cupboard! I added to the ricotta some mini choco chips, little peanut butter, sweetener, and vanilla extract. YUM! These were fun to make too--making the "rolls" felt kind of crafty. thanks Roni!

      This sounds SOOOOO yummy...I think even my hubby will eat these!       I LOVE eggroll and wonton wrappers. I use them to make homemade mini burritos, eggrolls, and my favorite reuben wraps. I fill them with a mix of saurkraut, swiss cheese, and diced corned beef. Then we dip them in dressing. It's great. I either bake them or lightly fry them on the stove with olive oil.

      I have yet to try Stevia--I'm assuming if I substituted splenda I'd need a lot more than 1/2 tsp. Do this taste anything like cannoli? If so then YUM!
