Blueberry Breakfast Quesadilla

I wanted to share this idea with you two days ago but I got a little distracted by "Good Morning America."

Yup, good old "GMA"!

They contacted me in the morning on Wednesday about my stolen photo situation and before I knew it, I had a news crew at my house!

Talk about SPEED cleaning!

They aired the segment yesterday morning (click here to see it) and then "Inside Edition" called me and I had ANOTHER film crew at my house yesterday afternoon. To say it's been a whirlwind is an understatement. On top of all that craziness, The 2-year-old has a virus, The 8-year-old needs help getting ready for school and The Husband has been busy at work.

I'm not complaining, it's all been a good crazy. I'm just taking a moment to wrap my head around it all.

Blueberry Breakfast QuesadillaAnyway, I made this quick breakfast a few days ago when I realized I had a package of The Laughing Cow Cinnamon Cream Smooth Sensations Cream Cheese Spread.

I love being a Community Leader for The Laughing Cow -- it allows me to get creative in the best way possible using products I really love. Honestly, I wasn't sure how this was going to turn out, but it ended up to be absolutely delicious! The cinnamon cream cheese and the blueberries combined to make a warm, gushy center to the crunchy flatbread. Best part? It took only moments to make and uses only 3 ingredients!

Here's what I did...

  • 1 Large light tortilla or Flatout wrap
  • 2 wedges of The Laughing Cow Smooth Sensations Cream Cheese Spread Cinnamon Cream
  • ½ cup frozen blueberries

Heat a nonstick skillet over medium-high heat.

While it's warming up, smear The Laughing Cow on half of the flatbread and top with an even layer of blueberries.

Spray the skillet with nonstick cooking spray.

Fold the flatbread in half and grill the "quesdadilla" about 2 minutes a side until the bread crisps and the blueberries defrost.

Cut and enjoy!

Be careful of the blueberry juice. It will drip a little but surprisingly everything holds together very well, and it didn't make as much of a mess as I thought it would.

    The cinnamon cream cheese looks like it is not available anymore. Guess I could use regular and add sugar cinnamon to taste.

    I saw this and substituted the Laughing Cow with 1/4 cup of ricotta cheese and I used fresh blueberries, it was delicious. After my first blueberry quesadilla, I made my ricotta cheese version with other fruits including bananas, strawberries, mangos, kiwi, and peaches, I love this recipe!

      Depends on the quality of your non-stick. I usually spray to be safe.

    Does it have to be frozen? I have lots of fresh berries. I also do not have the cinnamon but regular cheese.

      I'm sure it would work with fresh, I just never made it. Take the idea and run. There are no rules! 🙂

      Tried this for breakfast today using a light flatout, LC Cream Cheese Spread with a sprinkle of cinnamon, 1/4 cup frozen blueberries and 1/4 fresh peach, diced.....yum! Thanks Roni!
