20 Minute Roasted Potato Fries

This is my favorite way to cure a french fry craving at home. They make a great side dish or even a fun snack.

Sometimes I think the white potato gets a bad rep. I normally choose sweet but there's nothing wrong with a good size Idaho now and then. ESPECIALLY in fry form. 🙂

So I thought I'd share my latest technique and inspire you try fries the homemade way. Note: If you are expecting fast food style you will be disappointed. Think of these as hand held roasted potatoes that taste YUMMY in ketchup. 🙂

  • 1 large Idaho (baking) potato (~350-400g)
  • Non-Stick cooking spray
  • Kosher salt

Turn on the broiler and let then oven heat up.

Here's my steps. I thought I'd walk you through my whole process. It may be excessive but I had fun snapping the photos. 🙂

Start with your potato.

Cut it in half. der.

Turn the potato halves flat side down and cut in about ½ inch thick slices.

Lay the slices down...

and then one by one, cut them in half.

Rinse the fry pieces and place in a bowl of cool water.

Line an cookie sheet with aluminum foil and spray with non-stick cooking spray.

Dry the fries on a clean kitchen towel.

Place the fries on the cookie sheet, Spray with a bit more spray and sprinkle with salt. (Note: you could add other spices if you like, rosemary? garlic powder? Anything would be yum!)

Put them in the oven, 2 notches under the broiler.

Pull them out in 10 minutes. They should look like this...

Flip them and place back in the oven for 8-10 more minutes until golden brown like this...

Pile them up on a place, add a side of ketchup and dig in! 🙂

I'm calculating nutritional information based on 2 servings using a large potato (around 350-400g). Note: If you want to eat the whole batch (I do all the time) it's 5 points not 4. That whole fiber thing bites us in the butt again! 😉

    Not really I just noticed a crispier fry when I soaked a bit to remove the starch. Feel free to skip if it works for you!

    First off, THANK YOU for this!!! French fries are my ultimate weakness and I finally won't feel so guilty for it with this recipe.
    Next... is the water step absolutely necessary? I skipped it by accident the first time around, and I was wondering what would have been different if I hadn't.

    Thanks Roni! I make oven fries all the time but never thought of using the broiler- I'm going to try it out soon. Oven fries and a nice veggie burger loaded with lettuce and tomato! That really satisfies a summer craving 🙂

    Ahahahaaa I have the oldest old school oven in the world! My broiler is on the bottom of the oven. The flap opens up and touches my floor (its like 6 inches high) and then I have to pull out the whole broiler shelf/drawer that the baking sheet goes into and push it closed again. That's how I my broiler rolls.
    I have no broiler button. I have to turn my oven knob past the 500 degrees notch to the broiler notch. So I have only one setting.
    Apparently its the same setting you used too.
    I hate baking potatoes so I tried your way and my sweet potato fries came out amazing!! I made a light brown sugar, regular sugar, cinnamon and nutmeg sprinkle on top and it was perfect. I died a little when Jon ate them. He hates sweet potatoes, wtf right? How can anyone hate a sweet potato...

    Katherine - Actually sweet potatoes don't have as much starch so you don't have to rinse them after cutting. Here's how I make them (you don't have to use curry, sometimes I do cinnamon or salt and pepper, depends on my mood)...

    I do sweet potatoes like this all the time, but I sprinkle some cinnamon instead of salt/pepper on half (for me) and nothing on the other half (for the hubs who likes his with ketchup).

    I have made oven fries, but not using the broiler! I like how yours turned out so I will have to try it. I've also read that if you bake your fries on a cooling rack, they get more crispy since the air can circulate around them.

    Love theses french fries! we make them all the time,but instead of ketchup we pour a little malt vinegar on them. so yummy. :O)

    You can also use these technique (or any other baking method) with kohlrabi. They turn out delicious and very low in points.

    Wahoo! Several weeks back the husband and I were extremely strapped for cash (outta food, wasn't getting paid for another week, and only had $5 collective to our name) so we bought a big bag of russet potatoes for really cheap. They tasted amazing on the grill! And in my breakfast hash! I do think white potatoes do have a place in one's diet.

    Just want to check, we are broiling them, correct? Because you didn't say what temperature to set the oven to otherwise.
