Roasted Sweet Potatoes with Candied Ginger and Nutmeg

Over the years, I have really simplified my dinner sides. There’s always a vegetable, of course. Our go-to’s seem to be broccoli, cauliflower, Brussels sprouts, asparagus, sugar snap peas, or peas, just roasted or warmed in the microwave with a little salt. All 3 boys pretty much eat any of those without complaint. The toddler is wavering on Brussels sprouts and asparagus, but he’ll come around.

In the “starchy” side department, I normally do brown rice, squash fries, corn or some form of potatoes Read the rest of this post »»

Simple Ham Avocado Quesadilla

Ever since The Toddler started solids, I’ve kept avocados in stock. One of his favorites was Banana Blueberry “Pudding.” We don’t make it much anymore because now he just eats avocados cubed and loves it! I, on the other hand, am still learning to love them. I’ve never been a guacamole fan, and large chunks of avocado kind of gross me out.

That being said, I have enjoyed them in things like wraps and on things like chili. Now that I’ve eaten them for some time, I appreciate the creamy texture and mild taste. Read the rest of this post »»

Quick Asparagus and Ham Egg Cups

Sorry for my short hiatus guys. I went away this weekend to play in some mud and left my kitchen behind. When I got back I made tacos with a side of asparagus for dinner.

Weird combo, right?

Well, I forgot I bought the asparagus last week and of course it sat in the fridge all weekend while I was away because there no way in hell The Husband is going to roast asparagus for dinner. Read the rest of this post »»

Pumpkin Yogurt with Pepitas and Honey

I’ve been having a BLAST with my self-initiated #DailyYogurt challenge. Every day I try to come up with a fun tasty way to top plain old yogurt using whatever I have in the house. It’s been teaching to me think beyond the grab-able processed snack and find more whole options when I’m hungry.

I made the switch from flavored yogurt cups to tubs of non-fat plain yogurt slowly over the past few years and I LOVE it. Read the rest of this post »»

Simple Spinach Salad with Bacon and Feta

Last night was brinner night. The boys absolutely love breakfast for dinner and I welcome the break from worrying about what I’m going to make.

I fry up some bacon, a couple of eggs, make a batch of pancakes, and everyone’s happy.

Normally I’ll eat with everyone but last night I just wasn’t in the mood for breakfast. I happened to have breakfast for breakfast and I really wanted dinner for dinner.

I sat there, staring at the bacon and that’s when it hit me: Read the rest of this post »»

Leftover Pork, Apple and Cheese Quesadilla

I was rummaging through the fridge looking for something to eat for lunch when I came across the end of my Chinese 5 Spice Pork Loin. At first was thinking of just cubing it to top a salad, but I just wasn’t in the mood for a salad. I wanted something else. Something ‘sandwichy.’

I’ve already made my Cuban-esque Sandwich twice and I love the twist in flavor the Chinese 5 spice gave it, but I was out of pitas and english muffins. That’s when I spied the tortillas and immediately I thought: Read the rest of this post »»

Chinese 5 Spice Pork Loin with Beer and Apple in the Slow Cooker

I LOVE spices! I can’t imagine not having a stocked spice cabinet. I grew up with a mom who had a stocked spice cabinet and now I am a mom with a stocked spice cabinet. I can only hope I’m passing my love of spices to my boys as well.

There’s only one problem being a spice lover: They’re darn expensive!

For basics I choose the cheapo brands. Read the rest of this post »»
