Hello from the Beach! Sorry I’ve been MIA. This week is our family outing to the Jersey Shore. I’ve been posting a few fun photos and my food journals on my weight loss blog but have neglected poor GreenLiteBites. Not for lack of ideas (I’m backlogged) but for lack of time.

The day before we left The Husband was away on business so I decided to have a little fun with dinner.

Avocado Orange Salsa

Yesterday for lunch I wanted something fun, and tasty and, well, “summery.”

I happen to have a bunch of clementines so that’s where I started.

Oranges are fun and tasty and summery. Right?

Now, to make them into a meal.

Blueberry Chicken Salad with Cheesy Herb Dressing

I’ve been dying to share this with you since last week. I totally made it on a whim for lunch and it came out spectacular! The quick cheesy dressing perfectly brought together the chicken and blueberries making it a hearty satisfying meal.

To make the dressing I just plucked a few leaves from my herb garden.

The Black Bean Brownie Trick

Let me start this post off by saying A.) I don’t think these are “healthy” or a free for all because they have beans in them and B.) I’m not against indulging in REAL full fat style desserts now and then.

Now, since we have that out of the way…. IF I can feed my kids (and myself) yummy, gooey, amazing brownies on a special occasions that have less fat, more fiber and more protein why wouldn’t I do that?!?

Sweet Mozzarella Caprese Quinoa Salad

This idea slapped me in the face yesterday when I was trying to figure out lunch. The Husband went for his disgusting frozen Mac & Cheese –seriously, that stuff is GROSS. I can’t even handle the smell– and the baby had leftover black beans, grebe beans, Triscuits, cheese and watermelon. That left me to my own devices.

LOVE this situation!

Black Bean & Cilantro Lettuce Wraps with Yellow Squash
