Have I told you about the toddlers obsession with Chinese food? He LOVES Low Mein and Chicken with Broccoli. He even attempts to eat with those kid chopsticks they hold together with a rubber band. It’s totally cute. So for lunch yesterday I thought, why not make a homemade version with what I had on hand?

Makin’ Peppered Pork with Peppers

They liked it… They REALLY liked it! I can’t believe it. The only complaint came from the toddler was when he informed me he did not like "stuff" on his peppers. How can fault him for preferring raw peppers over cooked. So I took them off his plate (after he tried a bite, of course) and replaced them with uncooked green pepper strips. Golden Corn Muffin Topped Turkey Chili

Oh my WORD! I’m SO glad I made this even though I knew the husband and toddler would hate it. Have I mentioned the husband’s unmanly trait of hating chili? Seriously I must be married to the only man in America who doesn’t enjoy a bowl of chili. It’s CHILI! Not only is he not a chili man he’s not corn muffin man either. So when I mentioned this idea I got the old *eye roll*. I made it anyway and had burgers ready for him and the toddler. This way I could enjoy the fun meal. Failed Pomegranate Angel Food Cupcakes

The name says is all. It’s a FAIL! BUT on toddler entertainment alone the video is worth posting. He’s in rare form and practically falling asleep by the end although he’ll never admit it. So take this video at face value. As mom taught me, it never hurts to try! That being said.. I can’t wait to try this idea again!

Sweet Pomegranate Chickpeas with Optional Tuna

This started as a quick vegetarian lunch idea and then I had a conversation with a friend who said he thought I needed more protein and suggested tuna. As soon as he did I looked down and said "Perfect! That would be awesome in this!" I added a small can and it was delish. It was without it too, but the tuna added that, ummm, well, tuna texture. :)

I had another one of those morning where nothing sounded good. I didn’t feel like eggs, I’m sick of cereal and I just didn’t want to make muffins. I was just craving something different. Twenty minutes later, Apple Cinnamon Breakfast Quinoa was born! What can I say? I LOVE the challenge of inventing! :)

Wonderfully Wicked Wasabi Dressing

I firmly believe the more flavor and spice a meal has the more satisfying it is. My favorite part of the pantry is the spice cabinet. I may not have the fanciest most expensive spices money can buy but the 99 cent version sure do the job.

Chocolate Peanut Butter Sticks

I TOTALLY forgot about this idea! I made it up weeks ago and didn’t think about it again until last night when I was craving something sweet. Using an egg roll wrapper (I was planning on won ton but they were all out) a handful of chocolate chips and some healthy peanut or almond butter you get crispy, chewy, chocolaty treat in minutes!
