Returning home after an all morning conference, I was craving a salad. Strange, right? Thankfully I had some leftover chicken breast and I just bought a jar roasted peppers. That was all the inspiration I needed! :)

Guac Chicken Sandwich

I don’t know what’s up with me but I’ve been buying avocado. I don’t like guacamole so I thought I’d try to come up with other ways to eat this healthy fruit (produce pick coming soon about it.)
My first experiment , Avocado Lime Dressing, was tasty but this idea takes the cake. Here’s the thought… I don’t like guacamole because of the texture but I like all the flavors that are in it. Makin’ Oven Burgers

This recipe could be considered a failure. I guess. I mean… I loved it but I didn’t even try it on the husband because I knew he wouldn’t and the toddler declared the burgers too "oniony". Either way, I’ll still share as you can, at least, take the idea and make it your own by skipping the onion or even adding something else.

Banana Bundt Bread

I will not dare say I know the difference between a bread, a cake, a muffin, or even a pie for that matter. All I do know is sometimes I crave a "baked good". At least I did today.

Easy Slow Cooker Vegetarian Chili

I knew I would have NO time to make dinner tonight so I grabbed a few cans and turned to my trusted Crock Pot. I have to admit, this is my new favorite veggie chili idea. I just threw everything in the pot and walked away. Next time I’ll have a few more veggies to throw in, like a zucchini, yellow squash, more peppers. Whatever you want to add would work with this base.

The other day I was chatting over on BlogToLose and the topic of food came up, of course! :) Someone asked about freezing leftovers, specifically meat. I didn’t realize some people where scared to freeze leftover cooked meat. I do it all the time! And actually the chat reminded me I had a chunk of cooked pork loin just sitting in my freezer. Roni, I bought some frozen cod and attempted to bake it, put Mrs Dash on it..oh my it was horrible…texture was awful and it tasted well tasteless. What can I do with this fish to make it edible? I have another whole bag of it…..help?
