Sesame Chicken and Broccoli

Inspired by the husband’s favorite Chinese takeout, this has already become a favorite and I just made it up! The husband asked me to put it into ‘regular rotation’ and the toddler even asked for seconds!

Slow Cooked Pinto Chicken with Corn and Quinoa

It was one of those days I didn’t want to worry about dinner. So before work I pulled out the Crock Pot and a pound of chicken breast from the freezer. Genius! Right? Who ever came up with the crock pot idea should be named inventor of the century. It’s a life savior!

Qui-WHAT?
That’s what I said to myself when I started seeing recipes online using this unfamiliar grain. I never heard of it before this year.
Researching a bit on the internet I discovered it’s a super grain that’s apparently not a grain at all. It’s related to spinach! WHFood.com lists quinoa in their top World’s Healthiest food list because of it’s high in protein, magnesium, iron and it’s low in calories. Fiesta Chicken Salad

I’m “lucky”.
That’s what most people tell me when I confess I don’t like mayonnaise and I never did. Honestly, for as long as I can remember, the stuff has always grossed me out. It’s white, goopy and greasy. Why would you ever want to ruin a sandwich by slopping that all over the bread? (I’m a mustard girl ALL the way!)

Sweet Bean and Tomato Salad

I came up with this idea this past summer after picking up some fresh green beans and cherry tomatoes at a local farm stand. The beans are a nice additional and you could make this as a meal or a side easily.

Butternut Carrot Chicken Soup/Stew

I came up with this idea to use the leftover butternut pieces when I make fries from a really large squash. It was just an experiemnt but after the first time made it I know I have a keeper!
I call it a soup/stew because you can decide how thick you want to make it by how much broth/water you add. Leftover Meatball Wrap

The husband gave me this idea the other day even though he doesn’t realize it. See, he’s a big meatball sub guy. He LOVES them. However, his favorite place for meatball subs changed their recipe a few years back and he hasn’t had one since. I’ve offered to make them for him but he’s stubborn like that. Whatever!
Anyway, he mentioned how upset he still is that this particular restaurant changed their recipe and I immediately thought, “Hmmmm meatball sub. That sounds YUMMY!”

Simple Homemade Hummus

Hummus was one of those late finds for me. I never heard of it until about a year ago when I ordered a vegetarian wrap. One bite and I was hooked!
Now, I am in no way a hummus guru and this recipe does not use all the traditional hummus ingredients but for a quick homemade meal or party snack this works great!
