
This post isn't as much a recipe as an idea. Actually I consider all my "recipes" just ideas. I rarely make the same thing twice and if I do it's never the same exact way becuase I'm a reactor. No, I'm not going to explode at at moment, although I do feel like I am going to pop any day now--holy crap I'm 9 months pregnant!!
Sorry, pregnancy brain distraction.
What I mean is, I react to what I have on hand. I peer in the fridge or pantry and simply pull something together. Of course I try to keep them stocked with good things which is a challenge in and of itself but I learned a long time ago that being prepared and learning to cook what I had was the best way for me to stay on track while losing weight and trying to eat a little healthier.
This morning I made a grilled wrap...
...with, honestly, the only things I could find in my fridge.
I was bummed as I had no fresh baby spinach left. Then I rememberd I threw a bag in the freezer that was on it's last legs a few weeks ago.

The result was a warm, tasty grilled sandwich that was better than anything I could get at fast food. At least in my opinion and it took me about 10 minutes to make!
Here's what I did in pictures. If I wasn't 9 months preggers and in my pajamas un-showered I would have recorded a video. 😉
Ingredients
- 1 slice of a sweet onion chopped
- About ½ red bell pepper chopped
- 1 thick slice of deli ham chopped
- 1 whole grain wrap or tortilla
- ¾ oz of your favorite cheese shredded (I used a Mini Babybel® Light round and it was perfect!)
- Handful of baby spinach
Instructions
Sauté the onion in a non-stick skillet with a bit of cooking spray and kosher salt over medium-high heat until the edges are browing. About 2 minutes.
Add the peppers and ham and cook for another 2-3 minutes scorching everything.
Lower the heat to medium and remove the ham/pepper mixture. Set aside.
Return the skillet to the heat and warm the tortilla on one side for about 30 seconds. Then flip and add about â…“ of the cheese and a handful of baby spinach to one side of the wrap.
Top with the ham/pepper mixture and the remaining cheese.
Fold over and press down with a spatula. Cooking for about a minute then flip the best you can. You will lose some filling. No worries. it still tastes good. 😉
Cook for another minute after the flip. Then transfer to a plate and top with any of the filling that fell out.
I cut mine in half and ate with my hands. Then enjoyed any bits with a fork.
Nutritional Information (NI) will vary based on what you have on hand but using the preportioned cheese, a light wrap and keeping the fillings a majority of veggies this makes a great light lunch. Add a bowl of soup and/or a salad and you've got yourself quite a dinner!

You inspired me! I was looking for something quick and easy to make for supper after Zumba tonight. I knew I had 2 leftover baked chicken drumsticks and an open bag of baby spinach in the fridge. When I search "spinach" on your site. I found this idea. I sauteed some onion, green pepper, and garlic--added the chicken and some turkey pepperoni--and the spinach. Put it all in a whole wheat tortilla with an assortment of cheeses I had on hand (Laughing Cow light swiss, tomato and basil feta, and some reduced fat montery jack). Served with a side of salsa. Delicious! Thanks for the inspiration!

Thanks Roni! I went with shallots. In fact, I am eating this RIGHT NOW and OMG it's sooo yummy. I added some diced mushrooms and tomato sauce (ketchup?). Yet another recipe win. I also had the chocolate berry smoothy this morning and made too much so I put the rest in the freezer and I will eat it tonight after dinner =)

I normally only buy sweet or vidalia onions but any onion would work here. Use what you like! If you are more of an onion person you can use a stronger one. Sweet onions are just more mild in my opinion.

For us foreigners, is sweet onion just a normal brown onion or a shallot/spring onion, or even red eshalot? Really want this for lunch tomorrow!

I love the TJ "handmade" tortillas...they are really the bset tasting...they have flour and whole wheat versions and that's all I buy!

I do like them but they aren't my favorite. Although, they do hold up very well against mushy-ness better than some of the low-carb ones.

Are the Tjs Whole Grain Flour Tortillas yummy? I've seen them before, but was a little intimidated by them. I use Mission "Carb Cutting" flour tortillas that are 2 PP, and I find it hard to stray, since I love them so much!

Hi Roni! Looks delicious. Did you just use a hand grater to grate the mini-babybel? It seems like it would be difficult to grate such a tiny piece of cheese.

Really, any green would work besides lettuce. Kale, arugula, chard, it really depends on your taste, even turnip greens, mustard greens. I like the bags of spinach becuase they are versatile but my favorite for taste is arugula even though I don't buy it as much.

Do you have any suggestions as to a good subsitute for spinach? I have a sensative stomach that won't let me eat it anymore, even though I love it. IS there another green i could use in it's place that would give the same result?
