This post isn't as much a recipe as an idea. Actually I consider all my "recipes" just ideas. I rarely make the same thing twice and if I do it's never the same exact way becuase I'm a reactor. No, I'm not going to explode at at moment, although I do feel like I am going to pop any day now--holy crap I'm 9 months pregnant!!
Sorry, pregnancy brain distraction.
What I mean is, I react to what I have on hand. I peer in the fridge or pantry and simply pull something together. Of course I try to keep them stocked with good things which is a challenge in and of itself but I learned a long time ago that being prepared and learning to cook what I had was the best way for me to stay on track while losing weight and trying to eat a little healthier.
This morning I made a grilled wrap...
...with, honestly, the only things I could find in my fridge.
I was bummed as I had no fresh baby spinach left. Then I rememberd I threw a bag in the freezer that was on it's last legs a few weeks ago.

The result was a warm, tasty grilled sandwich that was better than anything I could get at fast food. At least in my opinion and it took me about 10 minutes to make!
Here's what I did in pictures. If I wasn't 9 months preggers and in my pajamas un-showered I would have recorded a video. 😉
- 1 slice of a sweet onion chopped
- About ½ red bell pepper chopped
- 1 thick slice of deli ham chopped
- 1 whole grain wrap or tortilla
- ¾ oz of your favorite cheese shredded (I used a Mini Babybel® Light round and it was perfect!)
- Handful of baby spinach
Sauté the onion in a non-stick skillet with a bit of cooking spray and kosher salt over medium-high heat until the edges are browing. About 2 minutes.
Add the peppers and ham and cook for another 2-3 minutes scorching everything.
Lower the heat to medium and remove the ham/pepper mixture. Set aside.
Return the skillet to the heat and warm the tortilla on one side for about 30 seconds. Then flip and add about ⅓ of the cheese and a handful of baby spinach to one side of the wrap.
Top with the ham/pepper mixture and the remaining cheese.
Fold over and press down with a spatula. Cooking for about a minute then flip the best you can. You will lose some filling. No worries. it still tastes good. 😉
Cook for another minute after the flip. Then transfer to a plate and top with any of the filling that fell out.
I cut mine in half and ate with my hands. Then enjoyed any bits with a fork.
Nutritional Information (NI) will vary based on what you have on hand but using the preportioned cheese, a light wrap and keeping the fillings a majority of veggies this makes a great light lunch. Add a bowl of soup and/or a salad and you've got yourself quite a dinner!
