I don’t know what's up with The Husband lately. He’s either finally maturing in the food department or I’ve just simply worn him down after years of making things outside his dietary comfort zone.
This is another recent meal I served that he raved about.
Note: The Husband’s food “rave” pretty much means an unsolicited “This is good.” That’s all the excitement I’ll ever get out of his non-foodie mouth for a home-cooked meal.
Anyway, this idea used my recent frozen lemon trick (Click here to see the video) and it really did come out tasty. Better yet, it was a super cinch to make. Here’s what I did...
Ingredients
- 2 Salmon fillets about 4 oz each
- Kosher salt
- 2 teaspoon honey
- ¼ cup grated frozen lemon
Instructions
Preheat the oven to 425 degrees.
Line a cookie sheet with aluminum foil and spray with non-stick cooking spray.
Sprinkle a little salt on each fillet and top each with about 2 tablespoons of the lemon. Then drizzle each with a teaspoon of honey.
Cook for 8-10 minutes until the fish flakes easily with a fork.
I served mine with roasted cauliflower and a quick fried rice I pulled together with what I had in the fridge. Adding some grated lemon, of course! 🙂

I'm eager to try this recipe and your frozen lemon trick. My husband makes the best salmon and I'm on a salmon kick during this pregnancy. Yay for another way to make salmon : )

This looks delicious! And the lemon trick looks like a winner. I will have to try it this weekend. I usually just put a lemon slice on top of the fish, and I always make sure the fish I use is not farm raised.

Congrats on getting your husband out of his dietry comfort zone little by little. I'm not married but I live with my brother and his is super picky. He would NEVER eat the salmon. But I made some mushroom couscous the other day, he HATES mushrooms, but did not tell him that it had mushrooms in it, and he ate a whole serving. Maybe one day.

Ashley - It was frozen and I agree with Rene, I think most has been frozen at some point, at least in my area.

Most salmon is frozen at some point unless you live in a place where you can trully get 'fresh fish'.

That looks very fresh and tasty! I need to get more fish in my weekly meal rotations! I love salmon so this might be a good place to start. It's just hard to find it fresh around where I live. Was your salmon fresh or did you buy frozen?
