    Roasted Margarita Asparagus

    Sometimes simple is the way to go.

    The husband actually ate all his veggies tonight AND I got an unsolicited compliment about them! I still can’t believe it!

    Ingredients

    • 1 bunch of asparagus
    • 1 lime cut into thin slices
    • Kosher Salt
    • Non-Stick cooking spray

    Instructions

    Preheat the oven to 375 degrees.

    Line a cookie sheet with aluminum foil and spray with non-stick cooking spray.

    Break off the ends of the asparagus, wash them and spread on the cookie sheet.

    Season liberally with kosher sat. Top with lime slices.

    Roast for 10-15 minutes shaking once or twice during cooking.

    No nutrition value on this one, the number of servings depends on how many asparagus are in your “bunch” and the ingredients add zip!

      Yum, I've made your recipe a few times now and it's always sooo good. I plan on making this over the weekend with some steamed (over the bbq) rainbow trout.

      We made a foil bag and threw them on the grill with some lean steaks. Huge hit, even 2yr old ate up his spears!

      Wow! I love this recipe. I cooked them exactly as you said and then placed them on top of a ricotta pasta dish that called for asparagus and lemon. Mmm! Thanks for the recipe!

      A friend of mine recieved some fresh, home-grown grape fruits. So, instead of lime, I use sliced grapefruit atop, and it was a hit! My husband loved it, so it's definitely a winner.
