I've seen this floating around the old interwebs for sometime but it was Alan and Carla who inspired me to finally give it a try.
The idea is simple: smear on some flavor and roast the whole head of cauliflower at once.
That's it.
That's all.
I love when something this easy comes that THAT good. And it really is good. My whole family devoured the head alongside some chicken and corn the other night for dinner.
Here's what I did.... Video below if interested.
Ingredients
- 1 head of cauliflower
- ½ tablespoon oil (I used coconut oil)
- Salt
Instructions
Preheat the oven to 450 degrees.
Wash cauliflower head.
Cut off the bottom of the cauliflower so it can stand up in a roasting pan.
Smear oil on and sprinkle with salt.
Place in oven for 50 minutes to an hour.
Cut wedges and enjoy!
Here's the 3-minute video... So fun and easy!
Nutritional info is pretty simple, I just added the bit of oil I used for point calculations.

I love making cauliflower like this! It's so easy and always turns out delicious. Another favorite way in our house to make it is by roasting the florets and the drizzling on a flavorful herb oil. A local (to me) little girl has a super cool cooking blog/youtube channel, which is where I got the herb oil recipe. You can check it out here for more inspiration for your next cauli! http://www.cookwithamber.com/roasted-cauliflower-with-garlic-herb-drizzle-10healthymeals-cook-with-amber/
