I don’t know what’s up with me but I’ve been buying avocado. I don’t like guacamole so I thought I’d try to come up with other ways to eat this healthy fruit (produce pick coming soon about it.)
My first experiment , Avocado Lime Dressing, was tasty but this idea takes the cake. Here’s the thought… I don’t like guacamole because of the texture but I like all the flavors that are in it. So why not use them and make something I do like?
Introducing the Guac Chicken Sandwich.
Let me just say… TASTY! and easy to make. I used a precooked chicken breast from Aldi’s (LOVE them by the way) but you could use leftovers or even a take this idea and run with it for a burger!
Here’s what I did…
- 1 cooked boneless chicken breast
- 1 whole wheat English Muffin
- about 1 tbsp avocado (15g)
- squirt of lime juice
- sprinkle of chili powder, cumin and dried cilantro
- 1/4 of a large green pepper
- handful of baby spinach leaves
- slice of tomato (or in my case a few cherrie ones – I was out)
Toast the English muffin.
On one side of the muffin smear the avocado. Splash the lime juice on and sprinkle with spices.
On the other side of the muffin, pile the spinach leaves, tomato and pepper (you may want to squash the pepper flat first).
Place the chicken on top of the pepper and put the avocado side on top.
Serve with a side of carrot sticks! :)

Hey Roni, I’m curious – what is it about Guac that you don’t like? Because you seem to enjoy the ingredients separately, or “deconstructed” in your (FAB LOOKING) sandwich!
Maybe it’s Cilantro you don’t like? Have you thought about making your own?
I love avocado on everything! I think eating it helps stave off fat cravings because it satisfies that mmmm-creamy-delicious part of your brain.

Oh…Melanie had a great idea! You could make your own guacamole. And maybe instead of a complete pureed guacamole you could make a chunky quac instead. The same ingredients just chunky instead of smooth. Yummy…that woul be a great sandwich topping. I have all the ingredients…might just beat you to it :-)
Yumm! I’ve been making something like this for my family. It is one of my 15 year olds most requested meals. We also add alfalfa sprouts to ours for crunch. Ans, the teen likes FF ranch on hers. (Figures! Teens put ranch on EVERYTHING!)
You must be psychic. I made guacamole just this evening and told the Beloved Husband that he should use it just like mayonnaise on his sammiches! Yum:)

I never liked overly creamy things and guac is just so creamy. I LOVE the flavors and I LOVE cilantro! I’m just more of a salsa girl.
I may like it if I make it myself but I’m not sure I’ll get over the texture of it the avocado. I’m liking it more in short bursts like smearing it on a salad or making it into a dressing. :)

Roni, We’ve been to 2 different Aldi locations looking for the pre-cooked chicken breast, no luck. Now I know some people are probably thinking, it’s not that hard to cook a chicken breast….but right now I’m all about saving time. Anyway, at our local Aldi the worker said she knew exactly what I was talking about and that it has been discontinued. :(
