    Vidalia Roasted Radishes

    Tonight's dinner was a success all around! Not only did I think that the experimental roasted radishes came out delicious but BOTH the husband and little guy liked them, no, LOVED them!

    I'm telling you, the stars must be in perfect alignment. Little guy ate his whole plate without one single complaint. Not one. I nearly fell off my chair. These are the days that make me smile. We tried something new and ate a healthy home cooked meal. Mission completed!

    As for the radishes, I really had no idea what I was doing. I heard someone talking abut roasted radishes and thought they sounded interesting. Raw radishes are very peppery. The husband and I like them like that but the little guy thinks they are "too spicey". In contrast, roasted they come out soft and sweet. Perfect for young palettes and a wonderful twist for adults. The husband who really likes them raw had nothing but good things to say about them cooked. Frankly, I was shocked.

    Ingredients

    • 1 bag of radishes, like a quart size (mine total about 430 g)
    • 1 small vidalia onion (more or less to taste)
    • 2 teaspoon olive oil (8g)
    • ½ teaspoon kosher salt

    Instructions

    Preheat the oven to 425 degrees.

    Cut the radishes in quarters.

    Chop the onion.Measure out 8g of olive oil in a medium sized bowl. Add the radishes, onion and salt. Toss to coast everything.

    Pour radishes into a baking dish or cookie sheet lined with aluminum foil. Roast for 30-40 minutes until soft. Toss about every 10 minutes.

    I served mine with broccoli and Pomegranate Pork which they went prfectly with!

      I made this tonight and added a zucchini, a few baby carrots and a clove of garlic - it was SO delicious! I am going to make it again and again.

      These were so good as a side dish for dinner! I only made a small batch for myself as my toddler already ate, but she ended up eating most of them off my plate! 🙂 Next time I will be making a much bigger batch.

      Made these the other night. So good! Def will be added into the "go to" vegetable list. Only thing I added was a splash of balsamic vinegar. YUM!

      I had to click on this from the pic on BTL! But it totally was not what I thought! I thought it was a plate of raw sushi fish! Ha ha! I guess I'm just craving some good sushi!

      You know... I love radishes. I just never buy them and now I don't know why. I guess its because they aren't along my normal path that I take in the grocery store. This sounds too good to pass up, i bet a spritz of lemon juice would be heavenly on them too. *drool*
      I tried to grow my own radishes last year, I didn't get a single one lol. Damn those birds, deer and rabbits!

      This is fascinating! We don't really like radishes raw, not more than a couple bites, anyway. But they're so pretty and so easy to grow. I'm definitely getting some at the Farmer's Market this weekend now!

      Another good way to enjoy cooked radishes is by slicing them thinly and evenly (food processor or salad shooter is excellent for this task) and sauteeing them in some EVOO until they are translucent and just browning.

      I HATED radishes until I tried them like this. Now I can't get enough of them!!

      This recipe is pure genius. I love to eat radishes for a cold snack, but I have never even considered roasting them. Thanks for the eye opener! I can't wait to try it!
