I made this on Saturday and honestly... SHOCKED at how good it came out! I bought an avocado without a clue as to how I was going to eat it, again. Honestly, I'm not the biggest fan of the avocado. I don't even like guacamole! I just started incorporating a bit of avocado here and there as accents in my diet for the health benefits. I must admit, I'm growing to love the creaminess it adds to dishes.
With this sandwich there was just something about the spice kick from the chipotle creamy cheese with the bacon, turkey and avocado. The sweet roasted pepper was just the icing on top! Or should I say in the middle?
I'm sure you've noticed but I've been quite obsessed with jarred roasted red peppers. Like avocado, these are a fairly new addition to my diet as well. I bought my first jar of them just a few months ago and now I can't get enough! I don't know why I was so timid to try them before.
As always I used my George Foreman as a panini press using pretty much the same technique I demonstrated here on video. It worked beautifully!
Ingredients
- 2 slices of your favorite whole grain bread. (I used Trader Joe's light as it was all I had)
- 1 wedge of The Laughing Cow Light Queso Fresco & Chipotle
- 1 tablespoon bacon bits (7g)
- 2 jarred roasted piquillo peppers
- 2 slices of deli turkey (just under 2oz)
- About ½ oz sliced avocado or mashed (mine wasn't very soft)
Instructions
Smear the cheese on one slice of bread. Sprinkle with the bacon bits. Top with the peppers, turkey and then avocado. If your avocado is softer you can mash and smear on the other slice of bread.
Press in a preheated panini or George Foreman grill. If using the Foreman, cook for 2-3 minutes then rotate and cook an additional 2 minutes. Here's a bit of before and after.
The result was tasty and pretty! My favorite combination. I paired with some raw carrots and sugar snap peas on the side. Delish!

Have you checked out the Ezekial 7-grain sprouted bread? I just bought it at the store and made a sandwich with it...it may be my bread of choice now! If you haven't you should check it out!

This isn't full proof but I put it in a ziplock bag and suck out as much of the air as possible. It helps.. a lot! You can also wrap it tight in foil. The point is to stop the oxygen from turning it brown.

I love avocado but I tend to want to eat the whole thing whenever I slice into one because they turn brown so quickly. Any tips on how to keep it from turning brown so I dont eat a full avocado in one sitting?

OMG! This is delicious! I just made it on a whole wheat bagelthin, minus the bacon bits (b/c I forgot to buy some) and it was amazing. I have no idea why I have not had jarred roasted peppers either! They are so yummy. I used the garlic & herb laughing cow cheese. I think this is a great sandwich! Thanks Roni 🙂

You have to turn it around because the back gets cooked before the front since it's not hinged like a traditional panini press. You'll see it in the video. 🙂

This looks so good! My hubby and I have used the Laughing cow and/or avocado in our panini sandwiches, but I never thought of throwing in some bacon bits! I'm going to put this panini on my "to-do" list for his week.

Nope. Nothing. Bread crisps up all on its own even without the spray. You just need a hot grill!
I always thought the need for butter to crisp grilled cheese bread was a bit bogus. Toasters do just fine with no fat. 🙂

Are you doing anything to the outside of the bread? Or is that just the cooking spray? I have a spritzer that I can fill with my own oil... I am just wondering how you got it that toasty? :O)

Yummy! I think anytime you turn a plain sandwich into a panini, it gets a million times better. This is making me hungry! I'm not a big fan of avacado either, but I might give it another chance now. 🙂
