The Simplest Mayo-Free Coleslaw Ever!

I've been feverishly loading up on fresh veggies from the farm stand like they are going out of style because, well, they are!

I've already gotten the itch to experiment with pumpkin but I'm just not ready yet. Fall may be knocking on my door but I'm holding on to summer for as long as possible. I'm not too keen on what follows fall and this year is predicted to be quite a snowy one!

As you can see from my Instagram shot above, I picked up a large head of cabbage on my last trip totally forgetting I had half a purple cabbage still in the fridge.

Cole slaw to the rescue!

I decided to make a super simple mayo-less slaw because, as you may know if you've been following along for some time, I'm NOT a mayo fan. Never have been, never will be. It's just not my thing.

Simple Mayo-Less Cole slawThis slaw is simple and can be used to bulk up pretty much any meal. I've already had it alongside roasted chicken, on top of a leftover turkey burger and I can't wait to have some with lunch. I'm thinking of breaking open a can of tuna and making a wrap with it and the slaw.

Sounds yummy, doesn't it?

Here's what I did...

  • 2 tbsp grainy dijon mustard
  • ¼ cup apple cider vinegar
  • 1 tbsp honey
  • 1 tbsp poppy seeds
  • ½ tsp kosher salt
  • ½ head red cabbage, shredded (~500g)
  • ½ head green cabbage, shredded (~500g)

Note: I was thinking of adding carrots but I just got too lazy. You could also use 2 bags of store-bought cole slaw mix to save chopping time.

In a large bowl whisk the mustard, vinegar, honey, poppy seeds and salt.

Add the shredded cabbage and toss well.

That's it!

The Simplest Mayo-Less Coleslaw Ever!

I love having stuff like this on hand in the fridge. It helps me eat a little better and lighter especially when the temps are falling and I feel like hitting up the comfort food mindlessly.
