Last night was brinner night. The boys absolutely love breakfast for dinner and I welcome the break from worrying about what I’m going to make.
I fry up some bacon, a couple of eggs, make a batch of pancakes, and everyone’s happy.
Normally I’ll eat with everyone but last night I just wasn’t in the mood for breakfast. I happened to have breakfast for breakfast and I really wanted dinner for dinner.
I sat there, staring at the bacon and that’s when it hit me:
A salad!
I picked up some feta cheese last weekend which goes amazing with bacon and I also have a bag of spinach in the house.
I didn’t feel like cutting up any other veggies so I decided to keep it simple. I just used the spinach and whipped up a quick oregano based dressing.
It was delicious and a totally satisfying dinner. Here’s what I did...
Ingredients
- Plateful of raw Spinach
- 2 cooked bacon slices crumbled
- 1 oz crumbled feta cheese (28g)
- 1 ½ tablespoon red wine vinegar
- ½ tablespoon honey
- 1 teaspoon oregano
- pinch of salt
Instructions
Arrange the spinach on the plate and top with the bacon and feta.
In a small bowl whisk the vinegar, honey, oregano and salt together. Drizzle it over the salad.

Love this salad, had it 3 times this week. Tonight had it with a salmon burger, delicious!

Tanne - I do but it depends on if I KNOW he doesn't like or if he's just saying he doesn't. You and I both know moms can tell the difference. 🙂 So if it's something he's never liked I let him side and will give him seconds of others things. If it's something he's just not interested in eating today but he has eaten it and it's something simple like carrots than no, I don't.
It's really a balancing act isn't?

Hi Roni, I have a question for you. I have a daughter who is starting to eat solids. I really want her to not have any of the eating issues I have as an adult. The clean your plate mentality. I really like your "one bite" rule. A question though... When the boys don't like something and they've taken their one bite do you give them seconds on other items on their plate if they want it? Do I give another slice of pizza if the carrot sticks and fruit are still on the plate? What are your thoughts on this? Thanks!
