Spinach Calzones

Give me Trader Joe's whole wheat pizza dough and I will figure out some way to use it with whatever I have in the fridge. Today it was a box of frozen spinach and some fat free ricotta, 2 things I try to keep on hand. Of course I used more spinach then cheese but it was still a tasty guilt free pizza like lunch while being super healthy! How can you beat that?

I've made something similar to this awhile back with fresh baby spinach, Spinach Ricotta Roll, but here's what I did today. . . Spinach Calzones

  • ½ Pound Pizza Dough (½ package of Trader Joes works great or you can make your own)
  • 1 10 oz frozen pack of spinach defrosted
  • ½ cup fat free Ricotta cheese (124 g)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ⅛ tsp kosher salt
  • 2 oz mozzarella cheese
  • Sauce for dipping - I used leftover homemade

Preheat oven to 425 Degrees

Separate the dough into 2 even 4 oz balls. Stretch and roll out the dough.

Drain any excess water from the spinach and mix it with Ricotta, garlic powder, onion powder, salt and mozzarella.

Half the spinach-cheese mixture on place each half on one side of rolled out dough. Fold over the dough, flatten a bit, seal the edges and pierce the top with a knife a few times.

Place calzones on a cookie sheet lined with aluminum foil and sprayed with non-stick cooking spray. Bake on the middle rack for about 20 minutes until crust is firm to the touch and the spinach is warmed through.

Serve with dipping sauce and enjoy!

    Hi Roni,

    I wanted to thank you for your beautiful and useful website. I have only been on weight watchers for a week and already have used so many of your recipes. Each one is so good.

    I don't have a traders joe by me, so I used wegman's whole weight pizza dough. It's 4 ww points per oz, compared to Trader Joe's 3 for 2 oz. This means I am really going to have to find me a Trader Joes, to save some points.

    Regardless, it was a great meal!! Thanks so much for sharing and inspiring me to get healthy.

    Just tried this! I recently made my first trip to Trader Joes and got the pizza dough. I used fresh, bagged spinach leaves and I baked it on a pizza stone. It's delicious and huge!!

    I Made these Friday... Both I and the Hubby loved it. I thought that these would be small but they were huge and packed full. Surprisingly cheesy and a great healthy pizza alternative.

    Oh yeah, I put spicy grilled chicken breast (3 oz) in the Hubby's and it was a nice addition.

    This looks delish!! And easy to pack for lunch. I'm definitely trying it asap. We don't have Trader Joe's in Hawaii 🙁 so I'll probably buy some whole wheat pizza dough from a local pizza place.

    YAY! You have a recipes section too with all these pictures! Now I don't feel like such a turd for having mine 🙂

    I'll look into making calzones, but haven't had a craving for them yet.

    That sounds YUMMY! Have you ever tried grilling the crust? It is sooooooooooo good! And faster than baking! We grill all of our pizza crusts; even in the winter.
