Sometimes, I just don’t want to think or measure or worry about dinner. On those days, I use things like pre-made soups, spices mixes or even precut veggies from the grocery store. Tonight it was a package of dry onion soup mix and a can of French onion soup that saved the day. Keeping things like this in the pantry make it easier on the nights I don’t want to worry about dinner.
Who am I kidding? I always worry about dinner! ;~P
The best thing about this meal was the toddler’s reaction when he took his first bite, “Mmmm Mmmm, this is good!” Coming from a toddler who is getting pickier and pickier by the day, it was the best compliment I could have received. And of course the husband liked it too, he had 3 separate things on his plate!
Ingredients
- 12 oz Extra Lean Ground Turkey (99% is best)
- ½ cup (40g) Quick Oats
- 1 Package Dry Onion Soup Mix
- 2 egg whites
- 1 Can French Onion Soup (like Progresso)
- 1 tablespoon Worcestershire Sauce
- 1 tablespoon Whole Wheat Flour (or other thickener)
- A thin slice of onion or 2 for garnish on top of the loaf (optional)
Instructions
Preheat the oven to 350 degrees.
Mix the ground turkey, oatmeal, dry soup mix and egg whites together and form into a loaf.
In a bowl, whisk the French onion soup, Worcestershire Sauce and flour.
Place the loaf in a roasting pan, top with sliced onions and pour soup mixture over the loaf leaving the top exposed.
Bake uncovered in the preheated oven for about an hour. The internal temperature should be 160 degrees when finished.
Once finished use the French onion soup as gravy for noodles or mashed potatoes. I served mine with whole-wheat egg noodles and peas. The whole meal was a hit!

Oats in ground meats don't add chewiness.. I promise. 🙂

Made this tonight! It turned out pretty good. I used bread crumbs instead of oats. Wished I would have tried the oats, but I was afraid of the chewyness.

This was the first meatloaf I have ever made that didn't fall apart, so I was super excited to try it. It was delicious! I added some brown sugar/ketchup glaze on the top, which brightened it up a little - can't have meatloaf without ketchup. 🙂 Thumbs up!

I tried this last night and it was a hit. Of course I didn't have the exact ingredients so I improvised but it still worked and was super easy. I do have a question for you though. How exactly do you calculate the points, like on which sites? I ask because I usually use Spark People and when entered everything in there and then did the points I came up with 7WWP but when I run it though etools I get 6WWP. I realize that it is just 1 point, but a point is a point. I'm guessing it is the Worcestershire Sauce that is making the difference, but it just made me wonder how you did it.

Alle - HMMmmmmm No you confused me. I put 2 ounces there because that's what it said on my brand. But I can't remembered if it was the bag or the box. Please let me know how it came out. One bag should be enough!

I have this in the oven now, but don't know if I did something right...
The recipe calls for "1 package" onion soup mix and in parentheses you say 2 oz. I bought a package of soup mix that has 2 envelopes in it and the net weight of the whole package, including both envelopes, is 2 oz. Was I supposed to use both envelopes or just one? 2 envelopes seemed like a lot, but I just wasn't sure.

Thanks for another great idea...im not sure this will be a huge hit with my bos though, the worcestire makes it a little spicy for their taste! I love the simplicity of it, its like a salisbury steak really and the self created gravy is brilliant. Id probably use a low sodium beef next time though cos I am used to a lower sodium diet and this was really salty for me. I will definitely adapt it though, the idea is fabulous.

Delicious! I made this on Saturday night and we totally loved it. I made the whole 20 oz of turkey - just added more oats. Then I divided it into 5 small mounds for single serving sizes. There was still enough sauce. I made a meatloaf sandwich yesterday out of the leftovers - and seriously it was so good...WOW. This is really good with ketchup! This is another hit! Thank Roni.
P.S. I now make so many of your recipes I now just say to my husband, "This is my friend Roni's recipe" and he knows it will be great.

That's EXACTLY why I has 12 ounces as well. I only buy ground turkey in 20 packages as well! LOL so you will see all my idea are either 12, 8 or 4 oz of the stuff. Glad to help!!

Did you post this just for me? Tonight we are having your Quinoa and Turkey Taco Stew. Had to run all over for Quinoa, but that's a different story. 🙂 Anyway, that recipe calls for 8 oz of ground turkey. The ground turkey my grocery store carries only comes in 20 oz packages--leaving me to wonder what I was going to do with the other 12 ounces. I log on here and wallah! My problem is solved with your Simple Onion Turkey Loaf. Soooo, tonight 12 oz of turkey will go into the freezer, using your freezer method for quick defrosting next week for Onion Turkey Loaf.

Looks awesome as usual. I JUST made this the other day and used Liptons BEEFY onion soup mix on a recommendation from a friend. It was delicious. I also threw in a small can of mushrooms, chopped up, just for fun and flavor.
I like the soup as gravy idea - great tip. My family would love that!

This does look good. I always love when there are no complaints from the kids. DH eats whatever I fix without a word good or bad. Every now and then he will say dinner was good and I can usually tell by the look on his face if it is not his favorite. I do have to tell you though that every time I see peas in your pictures I cringe. Peas are the only veggie that I still do not do as an adult. I guess to many bad peas as a kid. One of my favorite snacks are sugar snap peas, but those little round roll around your plate things can stay in your pictures for me.
Your asparagus does look good. My favorite way to fix it is to roast it. I like the lime idea.
