
Oatmeal and I have been on quite a journey. I outlined it in this post a few years ago so I won't revisit it all.
Old-fashioned and steel-cut oats are both staple pantry items for me, but I've been eating them less and less for breakfast. I'm not sure why. I just always happen to have lots of yummy leftovers in the fridge to make fun scrambles. Add a drizzle of sriracha and I'm in heaven, so eggs have been my go-to for some time.
Sunday, however, I had a craving for oatmeal and to be honest, I was pleasantly surprised how satisfied and full I was afterwards. It was a great reminder to vary my breakfast a little more. Sometimes I get stuck in a rut eating the same thing over and over out of convenience.
This was truly a warm bowl of awesome. Neither kid was interested, which was surprising as they both devour my other banana oatmeal creations.
Here's what I did...
Ingredients
- 30g old-fashioned oatmeal (⅜ cup)
- ½ cup water
- ¼ teaspoon vanilla extract
- Pinch of salt
- 1 tablespoon unsweetened cocoa powder (5g)
- 1 tablespoon natural peanut butter (14g)
- ½ banana, mashed (50g)
- Hemp Hearts for sprinkling (optional)
Instructions
Cook the oats, water, extract, salt and cocoa powder over medium-high heat. Once it starts to boil and thicken add the peanut butter and stir to melt in.
Continue to cook until it thickens and most of the water is absorbed.
Remove from heat and stir in mashed banana.
Top with Hemp Hearts (sunflower seeds would be yummy too!).
