    Single Serve Steel Cut Oats Topped with Blueberries

    I've been on quite a journey with oatmeal. Five years ago I never touched the stuff. Ever. It just wasn't on my radar. I don't remember eating it much as a kid. It surly wasn't something I made in college and you guys know who I'm married to, right? I don't think the husband has ever had a bowl. At least not since I've known him.

    Yet somehow I became a person who just whips up a bowl of Steel Cut Oats in the middle of the week.

    How did this happen?

    As it turns out, VERY slowly.

    Raspberry Almond Oatmeal

    November 2010 - I went back to Old Fashioned--I don't think I'll ever ditch them completely--and made two bowls using nothing by water, extracts, a bit of honey, fruit and nuts.

    That brings me to today. This morning I made my second bowl of Steel Cuts this week. I'm loving the chewy texture and I must admit, they do stay with me longer.

    Cooking time is surely increased but it's really not as bad as I thought it would be. Most of the time is hands off so I give a little stir while emptying the dishwasher or feeding the kid then viola! A warm bowl of minimally processed oats!

    Here's my system..

    Ingredients

    • ¼ cup (40g) Steel Cut Oats
    • ½ tablespoon honey (10g) or more to taste
    • 1 teaspoon cinnamon
    • ¼ teaspoon nutmeg
    • 1 cup water
    • About ½ cup frozen wild blueberries

    Instructions

    Put the oats, honey, cinnamon, and nutmeg in a small pot.

    Add the cup of water and bring to a boil.

    Continue to boil it for about 5 minutes.

    Lower to a simmer and continue to cook for about 20 minutes.

    After 20 minutes most of the liquid should be absorbed.

    Transfer to a bowl and top with the frozen blueberries.

    Enjoy! The best is when the oats start to melt the blueberries and you get this glorious color!

      I too LOVE Steel Cut Oats...did you know you can make a weeks worth in the crock pot and just heat up the portion you want. Also, if you soak them for 30 min.in cold water and in a zip-lock bag...they will cook on the stove top in a few minutes. It's a great trick.

      What a great post Roni-love the look back.

      I make overnight oatmeal with old fashioned oats (no cooking), but have never tried with steel cut, have you?

      p.s. I do similiar recipes with oatmeal and also with quinoa. Instead of or in addition to, try to experiment with some "exotic" spices...cardamom, mace, a bit of cloves, powdered ginger, even sweet curries or garam masala...for example..garam masala with chopped dates and pecans...sweet, mild curry with a dollop of fig jam...the combinations are endless!

      A polite suggestion...is there any way that you could put the title of your recipe in the SUBJECT line of your email? I move recipes that I like into a FOOD folder in my outlook, and it would be nice if I could easily scan the subjects to find a recipe idea. THanks if you can do that, Thanks for the recipes if you can't!

      I love making them in my slow cooker overnight. They are ready when I wake up and my whole house smells amazing. I used to put craisins in but they increase the point value too much for me. Now I'm experimenting with different fruit to put in. Sometimes I put a couple tablespoons of ground flax in to get some omega 3 fatty acids in and thicken it up a bit.

      Wow. I'm so excited about this recipe. I've had my steel cut oats for about a month now & haven't yet made them-chicken I guess. The points seemed high, but I am totally making these tomorrow morning!! I don't have any blueberries left, but I do have strawberries in the fridge! YUM. Thanks for all you do, Roni!

      I really have to keep frozen berries on hand, they look so good on top of the oatmeal. I've been using bananas lately, time for blueberries!

      Great idea Lisa! I'll try that too.. although I don't think the 20 minutes in the morning is that big of a deal but that's just me, I like being in the kitchen. 😉

      I just started cooking steel coat oats and the EASIEST method is overnight. You do the same proportions (off the top of my head -- 1:4)and you bring it to a boil on the stove and cover and leave over night. Bam! there done in the morning. All you have to do is reheat in the pan or the microwave and they are perfect. Hope this helps!

      They have steel cut oats in the bulk bins at many stores, and at a much lower price than in the canisters. I bought one canister, simply to have the pretty storage, and now refill it from the bulk bins!

      I bought these at the Alexandria, VA TJ, I'm going to the one in Columbia, MD tomorrow, i will let you know if they carry it there, sometimes different stores don't have the same items I'm noticing.

      Mmm! I just bought some blueberries and steel cut oats at Trader Joe's. I picked up some quick cooking (8 minute) steel cut oats there, have you ever tried them? I didn't know they existed.

      WOW you've been reading that long! lol

      I really don't think they take THAT long but I can see when you are in a rush they would be a pain. You can try the overnight crock pot method, make extra and keep them in single serve containers in the fridge. They heat up surprisingly well! Just add a bit of water and warm in the microwave. I think those are our only options--25 minutes on the stover top or make big batches in the slow cooker.

      You can! I shop at "regular" stores about 90% of the time. They are in the oatmeal aisle, found in canisters.

      I remember your 1st Apple Pie Oatmeal, I can't believe it was 2007! I've never had Steel Cut Oats I've been eating Old Fashioned Oats since I started the Core Plan with WW. I have to admit, the Old Fashioned does not hold me near as long anymore but they're quick to make. I wonder if there is a quick method of cooking Steel Cut Oats??
