THIS SALAD IS AMAZING!
I'm sorry but it totally warrants some excitement. I made it the other day and I couldn't believe how yummy it was. Raw beets... I'm on a kick!
I've had a couple of beets in the fridge for a couple weeks and I'm in a use-them-now-or-never situation. Using what I had on hand this is what I whipped up.
The earthiness of the beets and the sweetness of the apple were just perfect together. Add feta and it's a glorious trio!
Here's what I did...
- 2 tsp olive oil
- 1 tbsp red wine vinegar
- 1+ tsp dried chives (more for sprinkling)
- 1+ tsp dried mint leaves (more for sprinkling)
- Healthy pinch of salt
- 1 raw beet, cut into thin strips (~150 g)
- 1 medium sized apple, cut into thin strips (~150g)
- 1.5 oz crumbled feta cheese
Mix the olive oil, vinegar, chives and mint in a small bowl and set aside to make the dressing.
Prepare the beet by peeling it (best done under running water as it's messy) and wash the apple. I simply sliced and then cut each slice into thin trips. (I forgot to take a photo, sorry.)
Toss the beets, apple, dressing and feta together, top with a bit more mint and chives for effect and serve!

My last salad was raw everything--beets, Cuties, carrots and cabbage. Yum. I know your salad will be good.
