Ingredients
  

  • 2 teaspoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 + teaspoon dried chives more for sprinkling
  • 1 + teaspoon dried mint leaves more for sprinkling
  • Healthy pinch of salt
  • 1 raw beet cut into thin strips (~150 g)
  • 1 medium sized apple cut into thin strips (~150g)
  • 1.5 oz crumbled feta cheese

Instructions
 

  • Mix the olive oil, vinegar, chives and mint in a small bowl and set aside to make the dressing.

  • Prepare the beet by peeling it (best done under running water as it's messy) and wash the apple. I simply sliced and then cut each slice into thin trips. (I forgot to take a photo, sorry.)
    1 raw beet
  • Toss the beets, apple, dressing and feta together, top with a bit more mint and chives for effect and serve!
    1 medium sized apple, 1.5 oz crumbled feta cheese
