Mix the olive oil, vinegar, chives and mint in a small bowl and set aside to make the dressing.
2 teaspoon olive oil, 1 tablespoon red wine vinegar, 1 + teaspoon dried chives, 1 + teaspoon dried mint leaves, Healthy pinch of salt
Prepare the beet by peeling it (best done under running water as it's messy) and wash the apple. I simply sliced and then cut each slice into thin trips. (I forgot to take a photo, sorry.)
1 raw beet
Toss the beets, apple, dressing and feta together, top with a bit more mint and chives for effect and serve!
