
I was rummaging through the fridge looking for something to eat for lunch when I came across the end of my Chinese 5 Spice Pork Loin. At first was thinking of just cubing it to top a salad, but I just wasn’t in the mood for a salad. I wanted something else. Something ‘sandwichy.’
I’ve already made my Cuban-esque Sandwich twice and I love the twist in flavor the Chinese 5 spice gave it, but I was out of pitas and english muffins. That’s when I spied the tortillas and immediately I thought:
quesadilla.
Pork with some cubed apple would be perfect! But what about the cheese? Initially I thought it would be gross, but then I remembered the fiesta cheese fondue at Melting Pot and how my favorite dipper is apple slices.
Cheese and apple DO go together and they made this quesadilla yummy with the spiced pork. It was so simple. So tasty.
I thought I’d miss salsa, but the crisp apple was moist and that crisp texture really brought everything together.
Here’s what I did...
Ingredients
- 2 small low carb/high fiber tortillas (Trader Joe’s are my favorite)
- 1 oz (28g) fancy shredded mexican cheese blend (Just cheddar would be yummy too!)
- ½ of a small apple chopped small (50g)
- 2 oz leftover pork loin chopped small
Instructions
Heat a non-stick skillet over medium-high heat. Spray with non-stick cooking spray. Ready you ingredients.
Lay one of the tortilla in the skillet. Top it with half the cheese, the pork and the apple. Then the rest of the cheese.
Lay the other tortilla on top and flatten with a heavy pot or just apply pressure with the spatula.
After about 2 minutes, flip
Cook on the other side until crisp and the cheese is melted through. About another 1-2 minutes.
Cut in quarters with a pizza cutter and enjoy!
