Leftover Pork, Apple and Cheese Quesadilla

Ingredients
  

  • 2 small low carb/high fiber tortillas Trader Joe’s are my favorite
  • 1 oz 28g fancy shredded mexican cheese blend (Just cheddar would be yummy too!)
  • ½ of a small apple chopped small 50g
  • 2 oz leftover pork loin chopped small

Instructions
 

  • Heat a non-stick skillet over medium-high heat. Spray with non-stick cooking spray. Ready you ingredients.
  • Lay one of the tortilla in the skillet. Top it with half the cheese, the pork and the apple. Then the rest of the cheese.
    2 small low carb/high fiber tortillas, 1 oz 28g fancy shredded mexican cheese blend (Just cheddar would be yummy too!), 2 oz leftover pork loin chopped small, ½ of a small apple chopped small
  • Lay the other tortilla on top and flatten with a heavy pot or just apply pressure with the spatula.
  • After about 2 minutes, flip
  • Cook on the other side until crisp and the cheese is melted through. About another 1-2 minutes.
  • Cut in quarters with a pizza cutter and enjoy!
