    Orange Chicken with Bulgur and Broccoli Idea

    Hello from the Beach! Sorry I've been MIA. This week is our family outing to the Jersey Shore. I've been posting a few fun photos and my food journals on my weight loss blog but have neglected poor GreenLiteBites. Not for lack of ideas (I'm backlogged) but for lack of time.

    The day before we left The Husband was away on business so I decided to have a little fun with dinner.

    I wasn't really planning on posting my dinner udea until I got this verdict from the 7 year old…

    (note: You know your kids are getting old when they don't want to get their picture taken anymore)

    …and the 1 year old devoured his plate…

    Chicken and all!

    So bear with me as I share the general idea of this meal. I hope it inspires a family approved dinner in your house. 🙂

    Here's the what I did...

    Ingredients

    • ½ cup uncooked bulgur
    • 1 cup of water
    • ½ large sweet onion chopped
    • 2 boneless chicken breasts cut into chunks
    • 3 small oranges or clementines
    • 2 tablespoon low sodium soy sauce
    • ¼ cup water
    • 1 tablespoon corn starch
    • 1 teaspoon ground ginger
    • 1 tablespoon honey
    • 1 bag of frozen broccoli

    Instructions

    Prepare the Bulgur according to the package. It should be a 1:2 ratio of dried bulgur to water.

    Heat a large skillet over medium-high heat and brown the chicken and onion with a bit of non-stick cooking spray.

    While the chicken is cooking zest the clementines then peel and chop them.

    Add the chopped oranges (and any juice that came out) to the chicken and onion and continue cooking.

    Whisk the zest, soy sauce, water, corn starch, ground ginger and honey together. Add it to the cooking chicken and onion. It will immediately start to thicken just keep stirring to coat everything.

    Add the bag of frozen broccoli. Stir to combine. Then cover and lower to medium.

    Cook for about 5 minutes.

    By this time the Bulgur should be done. Add the cooked bulgur to the pot, stir, recover and cook for another 5 minute.

    Serve!

    No nutritional information on this one. Just as idea to get your creative dinner juices flowing. I ended up with at least 5 servings because the chicken breasts I used were huge!

      Yum! this was really delicious! I managed to over-water my bulgur (I salvaged some for dinner, and I'm saving the less fluffy stuff for breakfast tomorrow, with a splash of milk and some cinammon and raisins).

      The orange rind gave it a great depth of flavour. Overall, it was quick to cook, but, I found I didn't really have enough liquid to coat things -- I might use a tiny bit more water, ginger and soy next time.

      I'm always on the hunt for health recipes, and this certainly fits the bill - thanks for sharing.

      The fact that you are also on pinterest makes it even easier for me, I've found that pinterest makes a really effective meal planning tool for what I need. I pin a few meals to get us through the week, and one or two light treats. That's how I plan how to get us through our CSA box!
