Back from vacation, in need of a light healthy meal without grocery shopping. I was saved by a couple of old limes and lemons in the fridge, frozen tilapia fillets and my garden! That's right, my garden! I had some fresh mint leaves and a baseball sized zucchini just waiting for me.
This is one of my older ideas, inspired by my one of my favorite drinks. :~) The husband likes it and it's a fun way to serve up some fresh fish for the family. Although my little guy wasn't that impressed. He really can't get over the texture of fish when it's not breaded. It's kind of funny. At least he tried it. :~)
Ingredients
- Juice of 1 lemon
- Juice of 2 limes
- Zest of one of the limes
- 1 tablespoon honey
- About 1 tablespoon fresh mint leaves chopped (save a few to garnish)
- 4-6 tilapia fillets about 4 oz each
- Kosher Salt
Instructions
Whisk the lemon and lime juice, zest, honey and mint leaves together. Sprinkle both side of the tilapia with a bit of kosher salt. Pour the lime juice mixture over the tilapia fillets and marinade for about an hour.
Spray a non sick frying pan with non-stick cooking spray and place over medium high heat. Cook for about 3 minutes a side until fish flakes with a fork.
For some reason I always serve with sweet potato fries and a veggie. This time it was grilled zucchini fresh from the garden!

Once again thank you Roni for a great recipe. I have been very reluctant to make fish although I love it. This recipe was so simple and so delicious. My husband was very skeptical and even heated up some left overs just in case he didn't like the fish. He loved the fish! We ate it with sweet potato baked fries and lime garlic green beans. I am really looking forward to adding fish to our diet. Thanks so much.

Thanks for the recipe. I too came home after two weeks of vacation! My boyfriend and I went to the grocery store so that we could start our healthy habits right away. We really enjoyed the fish. I think I've taken a cue from you--not being able to follow a recipe exactly. I'm usually not a person who dabbles in experimentation. Instead of using mint (we didn't have any) I used cilantro. It turned out great.
