    Mexican Pizza

    I took a vacation day from work today after a fabulous trip to Boston. I don't know about you but I always need a vacation from my vacations. 🙂

    Anyway, I wanted to make a quick brunch and I happened to have a can of refried beans opened from some quesadillas I made on Thursday with the little guy. You guys know me and my pizza addiction so it shouldn't be that much so this idea shouldn't be that much of a surprise.

    I only made one today and the toddler asked for a bite. He said he didn't like yet he kept asking for more. You be the judge. lol

    Ingredients

    • 1 whole wheat/low carb tortilla (I made a list of 1 point tortillas here)
    • ¼ cup fat free re-fried beans (60g)
    • 2 tablespoon of our favorite salsa (30g)
    • pinch of kosher salt
    • about ¼ cup diced peppers (I used a mix of red and green)
    • 1 oz mozzarella cheese (or Mexican cheese blend-- I just didn't have any 🙂
    • Sprinkle chili powder and dried cilantro

    Instructions

    Preheat oven to 425 degrees.

    Pierce the tortilla with a knife a few times and bake for about 2 minutes until crispier.

    Mix the beans, salsa and salt together. Smear it on the tortilla. top with the peppers and cheese. Bake for about 5 minutes.

    After pulling it out of the oven sprinkle with chili powder and cilantro.

    Nutritional information will depend on the tortilla you use. Approximate nutritional information based on the brand I used.

      I made mine with flatout bread. I baked my bread for a little longer to make it really crispy. Then I added the beans and salsa on top. I then added my cheddar cheese on top and baked for 5 minutes. Then I added chopped onion and lettuce and a little extra salsa after I took it out of the oven. It was delicious. We were having taco night at home, so the only other item I had to have for mine was the flatout bread and still kept within my calories. Thanks for the great recipe!

      i did try the flat out and the high fiber wraps from the tortilla factory, but didn't like either. then i made mini pizzas with arnold thins and loved them.

      Christine,

      I had four ideas right now which might help:

      1. Bake them a little longer, or at a higher temperature. Every oven is different.

      2. Pre-bake them in a non-stick pan without any fat at low or medium heat, maybe the pan will work better than the oven.

      3. Grill them in the oven or, if you don't have a grill in your oven, bake them very close to the top and thus closer to the heating wires of the oven.

      4. And the only idea with a little more calories: brush or spray the tortilla very thinly with good olive oil, oil sometimes makes things a little crispier.

      Please tell me if that helped and/or which idea worked if you try them. 😉

      christine - I'm not sure what brands you are using but you can always try a "flat out" too. Are you pre-baking? That get's mine crunchy. Experiment with times and bake yours a little longer.

      all of the lo-carb/whole wheat tortillas i have bought (including two on your list) get chewy when baked. any suggestions?

      Now I REALLY wish I had tortillas, salsa, and refried beans... 🙁 I have a truck load of mixed bell peppers that I would like to use up before they get wrinkly. I guess the grocery store needs to be visited soon.
