I bought a package of Portobello in hopes that it would inspire me. I've been falling into a cooking rut lately. Managing a household with an infant, a 1st grader, and a man child is wearing me down to say the least.

Tonight I sought some refuge in the kitchen.
Correction… on the grill.
I made the boys burgers and had fun with my Portobello mushroom. The only thing I did wrong…
making one.
It came out fantastic! "Meaty" and flavorful and totally hit the spot.
Here's what I did…
Ingredients
- 1 large Portobello mushroom
- 6 slices of zucchini
- A few rings of sweet green chile (bell pepper would work)
- 1 teaspoon olive oil
- juice of ½ lemon (about 1 tbsp)
- ½ teaspoon dried thyme
- pinch of kosher salt and Black Pepper
- ½ ounce of munster cheese
Instructions
Clean and prepare the the mushroom, zucchini, and pepper.
Whisk the oil, lemon juice, thyme, salt and pepper to make the marinade.
Toss all the veggies into the marinade.
Grill everything over a medium flame, turning the zucchini once.
After about 10 minutes flip the mushroom. Pour any remaining marinade into the cap and then layer the grilled zucchini and peppers on top.
Top with the cheese cook for another minute or two to melt.

Sooo good is the theme here.
Instead of green or sweet chilies, i used banana peppers and laughing cow cheese.
Slid it all on a sandwich thin.
