Clean and prepare the the mushroom, zucchini, and pepper.
1 large Portobello mushroom, 6 slices of zucchini, A few rings of sweet green chile
Whisk the oil, lemon juice, thyme, salt and pepper to make the marinade.
1 teaspoon olive oil, juice of ½ lemon, ½ teaspoon dried thyme, pinch of kosher salt and Black Pepper, A few rings of sweet green chile
Toss all the veggies into the marinade.
Grill everything over a medium flame, turning the zucchini once.
After about 10 minutes flip the mushroom. Pour any remaining marinade into the cap and then layer the grilled zucchini and peppers on top.
Top with the cheese cook for another minute or two to melt.
