It's that glorious time of year when my house is full of fabulous leftovers. Two days ago I cooked a 22 pound turkey with all the fixins: mashed taters, gravy, stuffing, sweet potatoes, Brussels sprouts, corn, harvest salad. It was good. Maybe my best Thanksgiving to date!
My stock and soup has already been made and we've been eating plates of leftovers for almost every meal. Today it was time to have a little fun.
I decided to make a quick turkey salad and use one of my favorite fall combos: dried cranberries, walnuts and cheese.
The result was delicious! A nice fun twist on the traditional Thanksgiving leftovers. Here's what I did…
Ingredients
- 2 oz leftover cooked turkey (Chicken would work too of course)
- 1 wedge of The Laughing Cow Light Garlic and Herb
- ½ oz walnuts chopped (14g)
- 10g of Dried Cranberries
- â…› teaspoon ground sage
- pinch of salt
Instructions
place all the ingredient in a bowl.
Mix well.
Easy. Right? MAN I love leftovers! 🙂
I served on a toasted whole wheat English Muffin with some salad greens and a side of leftover Harvest Salad I made for Thanksgiving.
