
I love transforming leftovers into something completely new and tasty!
This idea uses leftover cooked chicken and spaghetti squash to make some really awesome, yet super simple tacos.
I've used spaghetti squash in a burrito before with fabulous results. It's a great way to bulk up a meal without adding rice or traditional pasta. You get the volume with a heck of a lot fewer calories. Plus it adds an awesome touch of sweetness and crunch.
It really transformed these tacos into something special!
Here's what I did...
Ingredients
- 3 hard corn taco shells
- ¼ of an avocado, cut into 3 slices (40g)
- ~ â…“ cup cooked spaghetti squash (45g)
- 3 ounces leftover cooked chicken
- 1 ounce cheddar cheese, grated
- 2 tablespoon salsa
- Spinach or other greens to garnish
Instructions
Prepare the taco shells according to the package.
Place a slice of avocado in each shell. Top with the spaghetti squash, chicken, cheese, salsa and greens.
Done!
The crunchy shell, creamy avocado, sweet squash, chicken, cheese and salsa was an awesome bite all together. Great texture!
I made three and ate three, which I thought was a great meal. So I'm providing nutritional info for it as is.
