    Christmas Inspired Panini

    Sometimes I use the color of food to inspire me. There's something about putting together certain colors that just seems completely satisfying in both the taste and sight departments. Today I was driven by the classic Christmas colors of Red and Green.

    I picked up a couple of avocados during my last grocery store trip thinking they would be a good addition to my diet, especially while pregnant.

    I'm not the biggest avocado fan but I do think it's a great way to add a creamy texture to recipes and it's just so darn good for you!

    The avocado gave me a nice green base and I wondered what could I pair with it for the red besides tomatoes, which is such a classic combo. I didn't want to do classic. I wanted something fun and different. Then it hit me. Cherries!

    I bought a bag of cherries per the Little Guys request this weekend. We've been enjoying them all week and I just pitted the last few at breakfast.

    Avocado and Cherries, who knew!? Combine it with a smokey cheese like gouda and this was exactly the fun, different, healthy sandwich I was in the mood for. It came out perfect!

    I'm going to sign off for a few days with this recipe. For those of you that celebrate Christmas have a wonderful holiday weekend with your families. Enjoy every bite! 😉

    Ingredients

    • 2 slices of your favorite whole grain bread
    • About an oz of avocado mashed
    • 3 slices of deli ham, about 1 oz
    • 1oz fresh cherries chopped
    • 1 oz gouda cheese sliced

    Instructions

    Smear the Avocado on one slice of bread. Top with the ham, then cherries, then cheese and finally the last piece of bread.

    Grill on the stove top or press in a panini press. I use my George Foreman as a "panini press" all the time (that's how I made this) and it works great! Just watch as the bread tends to slide when you close the lid. Mine took 3 minutes (on a hot grill) and the cheese was oozing out. 🙂

      Cherries? Hmmm...I bet they add that sweet, sandwich spread/sauce flavor...I would have never thought to put cherries on a sandwich. They never last long enough! 🙂
