    Chicken Cordon Bleu Style

    I've been wanting to post this idea for 3 days now! Aomething always seemed to get in my way. So sorry for the delay.

    Anyway.... I LOVE when people send me recipes! This one came direct from Cindy who shares my Laughing Cow Cheese obsession.

    It's so simple, so tasty and So FUN!

    Surprisingly BOTH the husband and child ate it without complaint! Actually that's not true. The Little Guy did complain after the first bite but when I reminded him that he liked all the things it was made of and that he helped make them, he took another bite and said they weren't "that bad." Then he continued to eat the entire one I cut up for him. Go figure.

    Sometimes I really think kids just say they don't like new things by default.

    The husband actually said he wouldn't mind if I made it again. That's a rare compliment! He ate two leftover as he happened not to be home for dinner the night I made them.

    Here's what I did. It varied slightly from Cindy's because I didn't even check her recipe again before making it. I was just too excited by the inspiration!

    Ingredients

    • 6 chicken tenderloins (each just over 2 oz each totaling about 12 oz)
    • 3 wedges of The Laughing Cow Light Creamy Swiss
    • 3 oz of thin slices deli ham
    • 1 egg
    • About 1 cup Italian Seasoned Breadcrumbs (I made my own, see below)
    • Non-stick cooking spray

    Instructions

    Preheat the oven to 350 degrees.

    If you don't have tenderloins you can most certainly use breasts and cut them in half. I just happen to have a bag of those individual frozen tenderloins in the freezer. I pulled them out and defrosted. Then I solicited the kid for help...

    What 5 year old doesn't like to pound things with a hammer? 😉

    Pound the chicken to about ¼ of an inch. It doesn't have to be perfect. You are just going for flatness to make them easier to roll.

    Pull out the Laughing Cow wedge.

    I forgot to listen to and pull mine out early so it's room temperature. That makes it easier to spread. Regardless spread about ½ a wedge on each piece of chicken.

    Top with the ham.

    Create your roll and breading station complete with whisked egg in one bowl, bread crumbs on a plate and cheesy 5 year old.

    Roll the chicken from the smaller side to the wider side.

    There should be no need to secure. The rolls are small enough to remain closed.

    Dip the roll in the whisked egg.

    Roll in the breadcrumbs.

    SIde note: You can use store bought or make your own real quick. I crumbled 2 slices of sprouted wheat bread, along with garlic powder, onion powder, italian seasoning and parsley in my Magic Bullet. It made about double what I needed. Next time I'll only use one slice.

    Place in a baking dish that is sprayed with non-stick cooking spray.

    Repeat for all pieces.

    Spray the tops with a bit more spray and place in a preheated 350 degree oven.

    Bake for 30-35 minutes until the chicken is cooked through. The cheese may start to ooze out. Doesn't it look delicious?!

      It was delicious and the Husband approved. I made my own italian bread crumb mix using your guide and Gillians Gluten Free Breadcrumbs.

      I just started followng you blog and absolutely loved this recipe!! It's so yummy!!! Great to have such a versatile and delicious chicken recipe that can be switched up depending on what "stuffers" I have in the house! I also used mustard instead of the egg (I prefer it), but I used dijon mustard. The second time I made the chicken, I used Laughing Cow cheese, roasted red peppers, spinach, and a little roasted garlic. Yum! Thanks for the great recipe!!

      I made this last night and it was a HUGE hit with my whole family! Loved this recipe. I especially loved the homemade breadcrumbs - which it never occurred to me to try before but was so much better than store-bought. My 2-yr old, who has shunned meat for about the last month, even ate this! Thanks for the great recipe!

      I have followed your blogs since weightwatchen and have never left a comment. I have always loved how easy your recipes are to prepare. I tried this recipe, as chicken can become boring cooked the same old way. It was great. Even my hubby and kids ate it. Thank you for inspiring me to be courageous in my kitchen.

      Loved this! So quick and easy! My daughters don't like ham so I made them ones with the Laughing Cow Light Tomato, Basil & Mozzarella flavor and sandwich pepperoni. They thought the cheese was a little strong so maybe next time I'd use the original flavor (but they don't like ham so why take their opinion? LOL). These were very tasty. Thanks!

      Looks fabulous. You know what else you could add in the roll? Spinach! I recently bought a frozen entree like that which was stuffed with cheesy broccoli in the center.

      That looks great and easy enough to adapt to whatever chicken one might have on hand! I have some chicken thighs in the fridge and am thinking I might make a variation of this for dinner tonight!

      I make a variation of this using cheese, scallions, sometimes ham. I use a mustard/olive oil mayo combination for breading instead of eggs. I use about 2 parts mustard to 1 part mayo, brush on the chicken to coat, then bread crumb. The mustard gives some extra flavor. I've never tried it with laughing cow, I will next time!
