Instructions
Preheat the oven to 350 degrees.
Pound the chicken to about ¼ of an inch. It doesn't have to be perfect. You are just going for flatness to make them easier to roll.
6 chicken tenderloins
Pull out the Laughing Cow wedge. Regardless spread about ½ a wedge on each piece of chicken.
3 wedges of The Laughing Cow Light Creamy Swiss
Top with the ham.
3 oz of thin slices deli ham
Roll the chicken from the smaller side to the wider side.
Dip the roll in the whisked egg.
1 egg
Roll in the breadcrumbs.
About 1 cup Italian Seasoned Breadcrumbs
Place in a baking dish that is sprayed with non-stick cooking spray.
Non-stick cooking spray
Repeat for all pieces.
Spray the tops with a bit more spray and place in a preheated 350 degree oven.
Bake for 30-35 minutes until the chicken is cooked through. The cheese may start to ooze out. Doesn't it look delicious?!
Notes
You can use store bought or make your own real quick. I crumbled 2 slices of sprouted wheat bread, along with garlic powder, onion powder, italian seasoning and parsley in my Magic Bullet. It made about double what I needed. Next time I'll only use one slice.
