
I made this on Thursday. THURSDAY! I hate when I can't post something I've eaten within 24 hours. It just bugs me. Not sure why, it really doesn't matter when I post it, does it?
Anyway, I did whip this up to cure a pizza craving and I couldn't be happier. Using a little bit of 3 different cheese adds wonderful flavor. Making it indulgent when it really isn't! The whole pizza weighs in at less then 250 calories!
And it totally hit the spot for me!
Here's how I made it.
Ingredients
- 1 Large Tortilla or Flat Bread (I used A Flat Out Light Italian)
- About a tablespoon of your favorite sauce (I used my own homemade leftover)
- â…› cup of low fat Ricotta (31g)
- About 1 cup of fresh spinach chopped
- 1oz of part skim mozzarella cheese (28g)
- 2 teaspoon parmesan cheese (5g)
Instructions
Turn on the broiler and spray a sheet of aluminum foil with non-stick spray. Place the FlatOut bread on the aluminum foil and broil about 5 minutes on the 3rd rack from the top. Remove when the edges just start to brown and the bread is crispy.
Spread the sauce on the bread.
Smear the ricotta into the sauce.
You could also dollop but I wanted a little taste of it in every bite. It will mix in with the sauce.
Top with the chopped spinach.
Top the spinach with the mozzarella and parmesan.
Put the pizza back in the oven on the 3 rack from the broiler. Broil for about 5 minutes until the cheese melts and the spinach wilts a little.
Move to plate, cut, and enjoy!

This looks delicious. I also make a version of this using Naan Bread. We call it Naan Bread pizza and I mix up the ingredients. I think making dishes like this is a great way to incorporate veggies like spinach and peppers into the dish.
