
I have some big, exciting news! For the next few months I'll be working with the California Avocado Commission and posting at least 1 avocado idea a month now through October.
However, when someone sends you this many avocados how do you not eat them every day?
So even though I'm only required to post one recipe a month you may be bombarded with more because I blog what I'm eating, and I'm going to be eating a LOT of avocados.
The day I got the case there was one more ripe than the others so I decided to whip up a salad with what I had on hand and it was DELICIOUS! Have you ever paired sunflower seeds with avocados? What a great combo!
Here's what I did...
Ingredients
- ½ avocado, cubed
- 1 cup grape tomatoes, cut in half (150g)
- ¼ cup roasted sunflower seed kernels
- juice from 1 lime (~½ oz)
- ½ tablespoon honey (21g)
- 1 teaspoon dried cilantro (fresh would be great but I didn't have any)
- ¼ teaspoon kosher salt
Instructions
Put everything in a bowl and toss until well combined.

Oh! and the kids? Well, this is Ryan's reaction to anything with avocado in it.
Evan, however will still eat it straight up in chunks. The kid, in his short life, has already consumed more avocados than IÂ have in my 38 years. Click here to see him pound the stuff as a baby.
Calories are high in this but it's quite filling as a meal. I've increased my fat intake a bit and I am noticing it really does help me feel fuller longer.

Ha ha ha very funny Ryan's picture. However salads are very healthy and I like very much. I have never tried this combination with avocado .

I have the ingredients for your avocado/tomato salad and will be making that today. (Look for a tweet from me after I try it!) Wondering if you have any handy tips for keeping avocados fresh when you only eat half. I've tried spraying olive oil on the "saved" half and sticking in a snack-sized, Ziploc bag -- that kinda works. I saw a cool "cover" thingee that you slip over the avocado half to keep it fresh. But it was mentioned in a magazine and I didn't take time to buy it. I also heard leaving the seed in helps. Let me know if you have any tips, because as much as I'd love to eat the whole avocado -- I often make myself save half for another meal.

I'm so excited to see what you come up with! I'm just learning to tolerate avocado and I am hoping by the end of summer that I will actually LIKE them. Such a beautiful fruit and full of so many good things. I'd probably make the Ryan face, though if I tried the salad right now. Baby steps. 😀
