I’m shocked at how good these came out. SHOCKED. I totally made them on a whim this morning while rummaging through my kitchen looking for something to eat at breakfast. I had a gross of bananas just about turning overripe, oatmeal and 2 eggs. That was really it and nothing sounds good.

Then I remembered the Berry Oatmeal Cups and asked the toddler if he wanted to make muffins. Of course he said "Yes!" And so did Irish. :) Notice someone is getting camera shy.

So we (toddler and I) really did LOVE these. I didn’t even bother asking the husband. He doesn’t even like "regular" muffins and I’m not even sure he’s ever even eaten oatmeal. His reaction would have been the standard, "I don’t like it but I can see why others would." And I just didn’t want to deal this morning. As I say… more for us!   • 3 mashed bananas (the more ripe the better!)
  • 1 cup vanilla Almond milk (any milk should work)
  • 2 eggs
  • 1 tbsp Baking powder
  • 3 cups (240g) Old Fashion or Rolled Oats
  • 1 tsp vanilla extract
  • 3 tbsp (42g) mini chocolate chips

Preheat oven to 375 degrees

Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans.

Spray a muffin pan and/or liners with with non-stick spray.

Stir the chocolate chips into the oatmeal batter.

Divide batter into 15 muffin cups. They should be just about filled.

Bake 20-30 minutes, you’ll see the edges just starting to brown and they will be firm to the touch.

The muffins may stick when hot but are removed easily when cooled for a bit.

    I made these with very high hopes, but they did not turn out how I expected. I just didn’t like the texture, and my two year old spit it out. I’ve had the same issue with adding banana to recipes before, so I think I just can’t bake with banana. The texture is always weird. I’m going to try the pumpkin ones next time, though.

      I have made these before, actually unrelated with the site but added about a cup of applesauce. They make better little haystack cookies than muffins but they are delicious. Try applesauce.

    Do these freeze well? anyone tried making a batch and freezing them and pulling one out every night for breakfast the next morning?

      I’ve made a batch of these and froze them. They freeze very well in ziploc bags. I just took them out of the freezer the night before. These make a great portable breakfast! Thanks for sharing your recipe.

    I added 1/3 cup of brown sugar to satisfy my sweet tooth, and to make up for the calorie increase, divided into 18 muffins.
    Yum! Great grab and go breakfast.

    I added 1 cup shredded coconut and 1\2 cup chopped almonds. I also baked them longer, until the tops were a very golden brown. The texture was much better with those additions.

    I also had high hopes but give these a 6 on a scale of 10. I think adding a tablespoon of Splenda brown sugar blend would help but the texture was odd and the muffin didn’t want to hold together. Still a nutritious alternative for breakfast I think.

    I only used two bananas, but added 1/2 c of applesauce. Along with three packets of splenda and a teaspoon of salt. They turned out great!!

    I made these yesterday and I was quite disappointed. The texture was weird and I’m guessing because there’s no flour in the muffin, making the muffin almost too wet. I also added blueberries to mine. I ate two muffins, my husband choked down one. They were thrown in the garbage this morning. Not happy at all that I wasted time and money (blueberries are not cheap!).

    I just made these last night — Was about to go to bed and realized if I didn’t use my bananas RIGHT THIS SECOND it was going to be too late.

    I used 4 pretty large bananas and made up for it by adding just a little bit extra of the rest of the ingredients (and I had jumbo eggs). I also put in a little sugar and more than 3 Tbsp of choc chips… That was like no chips!

    They are so good! I had one for breakfast and I think the reason it was so delicious is because I microwaved it for 13 seconds before I ate it. Made the chips all melty and the muffin was warm… So perfect. I’ll make these again for sure.

    I am following The Daniel Plan diet for Lent. I have a huge sweet tooth and so I tried these tonight since I can have everything on the ingredient list. I used dark chocolate that I grated instead of chocolate chips. And I used GF oatmeal that I got at a health food store. They were very good. I had 2 tonight and plan on freezing them so I have something on hand when my sweet tooth comes out!

    Thanks so much for sharing- it is so fun when you try something on a whim, don’t expect much, and then find out they are delicious. :-)

    I think these are great. So healthy, simple to make and easy. My favorite thing about them is that there is no sugar. I make these quite a bit- whenever I have too many bananas. I play with it a lot. I’ve added applesauce, used different things in them (I personally thought the chocolate was a little *too* sweet, guess I’m the odd one out!) I usually use craisins. Don’t like to use nuts since I have babies/toddlers to feed. I always add a bit of oat flour…that might help the people who don’t like the texture. Just a couple tablespoons…not too much. I usually add flax just because I like to throw in those omega 3′s whenever I can.

    Hi!! I ran across this recipe on Pinterest and wanted to give it a try. I made them yesterday morning. Here is my experience and thoughts about them: 1) Made 16 muffins and 20 minutes in the oven was perfect. 2) My 4 year old took a very small bite and wouldn’t give it a fair chance. My 8 year old and our 11 year old neighbor loved them. 3) They were very dense and filling. The dense part…not my favorite, the filling part…great. 4) I made a couple of alterations to the recipe by adding 1/2 c. chocolate chips (instead of 3 T), 2 T. Whole Wheat Flour, 2 t. Wheat Germ, 1 t. ground flax. 5) In the future: a) I think they could be made as cookies as well as muffins b) I want to try turning the oats into oat flour to see if that will change the texture to something I like better. c) Try putting whole pieces of oats mixed with finely chopped pecans on top. c) Add cinnamon. I always think of cinnamon with bananas and oats. d) Remove chocolate chips and add apples and cinnamon. I will be playing around with these to see how I can vary them. Oh, fyi, I am on Weight Watchers and I put the recipe into the recipe builder to see the Point Value and they came out to be 3 Points each with my modifications. :)

    Came across this recipe and was excited that I could satisfy my sweet tooth without feeling guilty of sabatoging my diet. Hubby and I made them together and just got done eating one a piece. Like the comments I read above, they did turn out bland. BUT we both agreed that the texture was perfect and one muffin was pretty filling – these would definitely make great options for breakfast on-the-go. Next time, I’m thinking about adding some vanilla protein powder to give the muffins the extra energy boost and potentially using some sort of sugar sweetener. In the meantime, honey was an excellent addition to cure the blandness. I split my muffin in half, drizzled honey and it was delish! Thanks for the recipe. :)

    These were fantastic!! My husband has a little more of a sweet tooth so the last few minutes of baking I sprinkled a little Sugar in the Raw over the top and it have it a nice little sweetness to it!!! Can’t wait to try others!!!!!

    Guys! Guys! Guys! Hold on! Just throw the oats in your blender, make oat flour by a whiz on high speed for a minute, and then you won’t have the collapsible muffin syndrom. And actually, if you remove the oats, and blend up all the remaining ingredients, this simpler recipe becomes even simpler! Just mix in the oat flour/baking powder gently after! DO IT :)

    Made these the first time and they were extremely bland. The second time around I threw in a dash of salt to help bring out the flavor (I rarely trust any recipe without salt) and some craisins. Much better. Easy grab-and-go healthy breakfast and my husband likes them too. Thanks!

    After preparing the mix I realized I had packed(we are moving) my muffin tins. So I baked these on a cookie sheet for 10 minutes and had yummy cookies instead of muffins. Thank you for creating this recipe.

    I buy bananas every week just so they can get really really ripe and I can make these. They are fantastic. I also add a little flax chia seed mix to them. Everyone here raves about them. I don’t find them bland at all.

    Just took these out of the oven and they are wonderful. I didn’t change a thing about the recipe except I added about half the bag of chocolate chips oh and I added 1/4c ground flax. Everyone loves them. I think they make the perfect breakfast muffin :)

    I suspected that the recipe was meant to say 1 teaspoon (tsp) Baking powder instead of 1 tablespoon, so I went with that, and they are great!! Just letting you know in case you want to edit the recipe.

    I subbed 1/3 cup white flour for 1/2 cup oatmeal to make the texture more what I used to. Added 1/4 cup toasted chopped unsweetened coconut and 1/2 teaspoon almond extract. And one more tablespoon of mini-chocolate chips. They were plenty sweet and really yummy. I think once they sit for a day the almond and coconut flavors will come out even more. Next time I’ll try them without the white flour. The original recipe is healthier and it’s a great basic recipe to change up as shown by the tweaks in the comments.

    I made these last week and they were delicious. I’ve made them again today, only two changes, used apricots instead of bananas, put the oats in the blender for a few seconds (not turned to flour) just less coarse. Out of the oven and again they are delicious. Also, beat the eggs separately then add. Thanks for a great versatile recipe.

    I just love this recipe, but I did make some alteration.

    I always use whatever tipe of oat I have on hand, usually a mix of rolled oats, oats and oat bran. Instead of two eggs I like to use 1 egg + 1 egg white and, because I have a sweet tooth, I add some stevia, especially if I use raisin instead of chocolate chips.

    I love these muffins! Trying to keep my weight down and go to culinary school isn’t easy. But finding recipes like this one that use healthy ingredients and things I already have in the house is super helpful. Now I don’t have to throw out old bananas and can use up the last of some random nuts or oats. Thanks for the great recipe!

    I made these today and loved them. I used 1 cup of unsweetened Keefir instead of milk, blueberries rather than chocolate chips, added cinnamon to the batter, and sprinkled with coconut sugar. Delish!
