Garlic Honey Asparagus

I realize not everyone likes veggies straight up as I do. And sometimes even us veggie junkies need some flavor!

This is a simple marinade for asparagus that takes seconds to prepare and adds just a the right hint of sweetness without adding many calories.Garlic Honey Asparagus

Note: The husband thinks the marinade adds too much of a kick to the asparagus. But you can’t listen to him he doesn’t like asparagus anyway. (but at least I got him to try it!)

Mix honey, lemon juice, garlic in a small bowl to make the marinade.

Place asparagus in a ziplock bag. Pour honey garlic mixture on top.  Place in fridge for about an hour. Note: I don’t think the time really matters, I just prepare these first while getting everything else ready for dinner.

When ready to cook spread on a cookie sheet covered with aluminum foil and sprayed with non-stick cooking spray. Sprinkle with salt & pepper. Roast about 10-15 minutes in a preheated 375-degree oven.

Last note, I promise: I realize the entire rescipe can serve more then 1, it was just easier to post the nutritional information for the all of it. Just dived by the number of servings you use. Me, I can eat the hole bunch myself!

    I love asparagus. This is fantastic. Yesterday, I just cut down the asparagus bushes we have. I planted Asparagus plants last year and am so excited that we’ll be able to enjoy small bits of it fresh in the spring! I’ll save this one.

    I have been looking at your website for about a month now. I like to try new recipes for WW but like to see pictures, that’s why I love your website. Anyways I’ve been trying to decide which recipe to try first and I went with the Garlic Honey Asparagus, and OH MY GOSH!! Pretty much the best Asparagus I’ve ever eaten!!! And to eat the whole recipe is like 2 or 3 points!!

    Roni, this recipe is so easy with just a few ingredients and it looks so good. I didn’t like asparagus before because all I know how to cook it is stir fry. I’ll definitely try it tomorrow.
    Love your vegetarian section since I try to feed the family more vegie if I know how to fix them right, and your recipes help.
