I'm a HUGE Panera fan. It's one of the places I actually don't mind the husband suggesting when he wants to go out. One of my favorite things to get is their BBQ Chopped Chicken salad. There's something about the BBQ sauce with chicken and the crunchy tortilla strips I just love.
Armed with leftovers from my 4th of July Party, I decided to use it as inspiration, proving to myself yet again you don't need to go out for a great salad!
The result was not an exact match, but absolutely perfect for me! You can bet I'll be making extra chicken at our next BBQ!
Here's what I did.
- Pile of Romaine Lettuce
- Handful of cherry tomatoes
- 1 leftover ear of corn
- 3 oz leftover grilled chicken breasts cut up
- 3-4 baked tortilla chips crumbled (7g)
- ½ tbsp BBQ sauce
- ½ tbsp Worcestershire Sauce
Pile the lettuce and tomato on a plate.
Run a knife down each side of the corn cob to remove the kernels. Add the kernels to the salad, along with the chicken and tortilla chips.
Whisk the BBQ sauce and Worcestershire Sauce together. Drizzle on top and enjoy!
