    Sweet Salmon & Peas over Spaghetti Squash

    I LOVE LOVE LOVE when the husband isn’t home for dinner. Gosh, that sounds horrible, doesn’t it?

    I should say I love having a day now and again that I can experiment freely in the kitchen without worrying about pleasing anyone but myself (and the toddler but he’s WAY easier then the husband!)

    So my experiment was a lightly sweetened Asian style salmon stir fry-ish type of meal but instead of serving it over rice or noodles I went with spaghetti squash. It was great! Even the toddler liked it. I actually got him to eat salmon as I think the small pieces weren’t intimidating and they had a light sweetness to them. He also loved the peas, but the squash, not so much. That’s ok, 2 out of three “aint” bad. ;~P

    Ingredients

    • 1 tablespoon low sodium soy sauce
    • 1 tablespoon (21g) honey
    • 2 tablespoon water
    • 1 teaspoon ground ginger
    • 1 teaspoon cornstarch
    • 2 slices of sweet onion diced (about 100g)
    • 1 ⅓ cups (170g) frozen peas
    • 8oz salmon fillet cut in strips
    • 2 cups (310g) cooked Prepared Spaghetti Squash

    Instructions

    Whisk the soy sauce, honey, water, ginger and cornstarch. Set aside.

    Heat a skillet over medium and spray with non-stick cooking spray. Warm the onion and add the frozen peas. Cook for a minute or two allowing the peas to defrost. Add the salmon and cook for 3-4 minutes only stirring about every minute. If you stir more, the salmon will break up too much. After the 4 minutes pour the soy sauce mixture over, stir in and cook for one minute. It will thicken and just coat everything.

    Separate into two servings and scoop over warm spaghetti squash.

    My WWPs may be off on this one. When I use the nutritional information for dishes with a lot of “free” veggies my calculations come out a but high. I’d love to hear what you guys calculate.

      I made this as a side-dish for 7 and it worked quite well.

      We had cedar planked salmon as the main dish, so I made this (minus the salmon) as a side. I used all of one squash, and doubled the quantities for the sauce and the peas. I also used about 1 tbsp of fresh ginger instead of the ground ginger. Oh, and shallots instead of the onion.

      Fantastic ... I will positively make this again. Thanks very much!

      I had bought spaghetti squash and I had fresh salmon.I found this recipe. First time I write a comment.My husband and I loved it.I added a bit of terriyaki sauce for more sauce.

      I made this last night and it was great! I used scallons instead of onions because I had to get rid of them. They were very tasty.

      My husband really enjoyed it so I'll be making it again. Plus it was quick and easy.

      My 4 year old daughter loves spaghetti squash now! It is so easy to cook it in the microwave! I've always done it in the over and it takes so long.

      I made this dish this weekend but didn't have the spaghetti squash so I used wheat linguini and I really enjoyed it. I picked up a spaghetti squash and tried something a little different. I used chicken and yellow squash but what makes it so good is the sauce. I had never made spaghetti squash before but I really enjoyed it (until I saw how much it was). I called my mom right away to make sure she was going to plant some this summer. Thanks for doing everything you do on this website. I read it every day and have tried several of your recipes.

Your husband sounds just like mine, and if he says he doesn't like something our 9 year old son won't like it either:( I have to tell my husband to say he likes something even if he doesn't just so our son will try it.       We all eat differently when our husbands are gone and you can bet your life they eat differently when they're not with us!!!
      I am definitely trying this one and I've gotta get me a couple of spaghetti squash (what in the world is the plural of squash???)and put some prepared in the freezer. I love having it ready to pull out and use!

      Too funny! My husband is out of town tonight, so I was excited too! So terrible.;) I actually made a version of your mini turkey balls and broccoli tonight! -I used organic cream of mushroom soup and it was sooo good. My kind of meal. 😉
      But this one has husband-promise!! We live in AK & have a freezer full of salmon which he loves- I bet I could get him to eat this one!

      I totally understand where you're coming from! I tend to take it personally when picky eaters don't like my food (I have a mission to convert anybody food-wise!) So, it's SO nice when I just get to cook for myself and try things that others might think is "out there."

      I think the same thing about the husband.
      then, when he's home, I can pretend I merely forgot the meatloaf had eggplant (which he detests) in it until AFTER he has raved about how tasty it was!
      (me?! never :))
