    Sweet Chicken with Orzo

    I don't know what I was thinking. I had a rough day. I probably shouldn't have recorded but I did anyway. For some reason I knew it would make me feel better. And it did. 🙂

    Now let me tell you about the video so you know what to expect if you want to watch it. It's long. The toddler shows up about 5 minutes in and he's, ummmmm, all toddler. It's about the only way I can describe it. This video is truly a look at how we make dinner most nights, disheveled and unorganized. But FUN! it worked out in the end. Everyone actually enjoyed this meal, husband included. I was quite surprised. If you remember the husband has that whole fruit/dinner thing. It is a sweet dinner. 🙂

    So if you have an extra 20 minutes... enjoy laughing at me trying to be a patient mom. If not scroll down for the recipe.

    Ingredients

    • 4 oz whole wheat Orzo Pasta (I buy a case here and it's lasts forever! Stores well too)
    • 2 boneless chicken breasts (approx 1 pound) cut into chunks
    • 1 can pineapple slices packed in their own juice (20 oz) cut into quarters with ½ cup of the liquid saved
    • 2 tablespoon soy sauce
    • ½ tablespoon rice wine vinegar
    • 1 tablespoon whole wheat flour
    • ½ sweet onion diced
    • 2 large bell peppers (1 red & 1 green is fun!) cut into large chunks
    • 1 small-medium zucchini sliced
    • 3 cloves of garlic
    • 1 inch of ginger root
    • non-stick cooking spray

    Instructions

    Prepare the pasta according to the package

    Heat a large skillet over medium heat. Spray with cooking spray and brown the chicken.

    While the chicken is browning open the pineapple can. Take ½ cup of the pineapple juice and whisk with soy sauce, vinegar and flour. Set aside.

    Cut your veggies.

    One the chicken is completely brown remove from the skillet and set aside. Return the skillet to the heat, spray with a bit more cooking spray. Add the onion, peppers and zucchini in that order allowing some time in between for the onion to get soft. Add the pineapple. Stir. Grate in the garlic and ginger.

    Raise the temperature to high and add the pineapple juice mixture. Stir. It should start to thicken.

    Add the cooked chicken. Cooked orzo and stir for a minute or two merging the flavors.

    Remove from heat and serve!

      Thank you, thank you, THANK YOU for the link for the WW orzo! I basically grew up eating nothing but orzo and broccoli. I've been looking for WW orzo and haven't found it anywhere. This recipe reminds me of the pepper steak recipe my mom used to make. Thanks again!

      OMG - AMAZING! Roni, I try a ton of your recipes and while I love them all, this one will DEFINITELY remain a staple in our dinnertime lineup! I made with a side of snow peas with a drizzle of sesame oil. seriously outstanding! thanks for the post!!

      I just made this with the addition of broccoli & rice instead of orzo. It is really good. I'm packing it to take to work with me. I can't wait to see what the kids & husband thinks! I appreciate all of these wonderful recipes so much. Keep them coming!!!

      Roni,
      I watched this video and it looked too easy. I tried it today but used brown rice instead of orzo (my order from Amazon isn't here yet). Anyway, it was very good. I've packaged it up for my lunch this week. I must say I have found your videos very informative. Thanks for sharing and your little boy is too cute.

      Roni....I made this Wednesday late afternoon, before I went to WW and then pilates, so that my dinner would be all ready for me to eat when I got home after 7. It was good, but my veggies were a little too done, so I will know next time not to cook them too long. But like Rachel, I didn't have time to watch the video...I just used the recipe, and I left out the garlic and ginger also, because it wasn't in the written recipe. Oops. Thanks for all your wonderful recipes!

      This dish reminds me of my Mom. She makes the world's best sweet and sour chicken, the only difference from your recipe being that she adds crinkled carrots to it and no Orzo.I like the addition of orzo and I'll be trying this recipe soon.

      The food looks super good! I love the video's, I have a few boys of my own that like to help!! Anyways, love what your doing and I linked you up on my wine blog. I would probably suggest a Gewurztraminer with this dish to compliment the ginger, garlic, and sweetness. Cheers!

      OK I love the part where the toddler drinks from the cup, then pulls something weird out of his mouth and just tosses it, all while your back is turned.....too funny!!! And you really have a lot of patience, I wish you could give some of that away in one of your giveaways!! 🙂 Thanks for another great, real-life video.

      I haven't quite acquired the taste of fruit/meat together either. But I like to watch all your videos and definitely had to keep watching to be sure you didn't end up doing a "how to put out a kitchen fire' video.

      Hi Roni, Don't you wish that adults could be as easily amused with an empty cup like toddlers are?

      I have to say you were making me a bit nervous with the towel on the stove. I have a fire phobia and that just about did me in : )

      Thanks for posting. As it's nice to see videos without distractions and things being planned in advance, I also appreciate the 'real life' stuff like this video showed.
