
I LOVE STROMBOLI!
There I said it. It may be the number one reason I gained about 50lbs in college. It’s like a stuffed pizza and you’ll know about my pizza problem by now. ;~)
I thought I’d share how I get to have my Stromboli and eat it too. Let’s face it, a life without pizza and Stromboli is just not worth it!
Anyway, it’s possible to make a healthier weight conscious version that, frankly, I like better then those fat filled college binges I used to splurge on.
The first thing you need is to start with good whole wheat pizza dough. I’m working on a homemade recipe but in the mean time my favorite is Trader Joe’s refrigerated dough. It is 120 calories, 2g of fat and 4g of fiber per serving (2 oz) and there are 8 servings in the package. So I portion out the dough in 4 oz servings and make individual pizzas, Stromboli, calzones, whatever.
Here’s what I did yesterday for a fabulous family lunch!
Ingredients
- 4 oz whole wheat pizza dough rolled in a thin oval
- 1 oz shredded mozzarella cheese (part skim)
- â…› cup diced green peppers
- â…› cup diced red peppers
- â…› cup diced zucchini
- Large handful baby spinach loosely chopped
- Leftover sauce for dipping (or your favorite jarred stuff)
Instructions
Preheat oven to 425 degrees.
Prepare the the fillings by dicing up all the veggies (notice the toddler stealing my peppers!)
Measure out 4 oz of the pizza dough and roll it out. Sprinkle a bit of the cheese on the one side. Place the peppers, zucchini and spinach and top with the remaining cheese.
Fold over the dough to make a pouch and seal the ends. Pierce the top with a knife to let the air escape.
Bake for about 10-15 minutes on a pizza stone (or a cookie sheet sprayed with non-stick spray) until the dough is firm to the touch.

I also used the portioned out dough to make the husband a calzone and the toddler a mini pizza. It really was a fabulous lunch! Everyone was completely happy and I didn't overeat!!! (as I would have with a whole pizza, or if went out to eat Italian)

Room temp and flour. That's the best way I've learned to handle it.

I made this on Friday, and it was delicious! Thanks for the wonderful recipes. For my picky son (I know you can relate), I just used the cheese, some lowfat turkey pepperoni and sauce. For mine and my husband's I used the same, but added the spinach, chopped orange peppers and chopped tomatoes.
Do you have any suggestions for making the wheat dough easier to handle? I used Trader Joe's whole wheat pizza dough. I did dust the rolling pin with flour. Should I leave the dough at room temp for a little while before rolling it out? Thanks!

I absolutely love the recipe idea for Stromboli and can't wait to try it this week. I have a huge weakness for pasta and pizza type foods. I just saw it while looking at your Spinach Ricotta roll, which also looks inspired. I can't wait to try that one as well!

Years ago, I stumbled on a WW version of a stromboli recipe and I LOVE it! This one is very similar except mine used Turkey Pepperoni in it and oh my--YUM!!! I'm definitely going to be trying this recipe!
