This is one of those "here's what I whipped together" type of ideas. Here's the situation... It's lunch time, I have a 20oz package of ground turkey defrosted to make a double batch of Southwestern Turkey Burgers (I like keeping them in the freezer) which will leave me 4 oz leftover. (Why they only package ground turkey in 20oz packages is BEYOND me but I've gotten used to it.)
Anyway, I decided to use it to make this quick lunch. It's simple but super tasty and you can really use the "Curried Turkey" anyway you like. Top you favorite salad greens like I did or brown rice, even quickly cook up some bulgur.
Ingredients
- 1 thick slice of sweet onion chopped
- 4oz extra lean ground turkey raw
- 1 tablespoon red wine vinegar
- 1 teaspoon red curry powder
- ¼ cup (60g) of kidney beans
- non-stick cooking spray
Instructions
Heat a small non-stick skillet over medium-high heat. Spray with non-stick cooking spray and add the chopped onion. Leave it alone for a few minutes, allowing the onion to brown a bit. When the onion is a bit transparent with some brown edges add the turkey and break apart while browning. Once the turkey is brown (grey) add the tablspoon of vinegar and curry. Stir to coat the turkey. Stir in the kidney beans.
Now top your greens! Simple right? 🙂

i get a lb of foster farms turkey burger at costco! Thats less then 20 oz, right? Personally I am not a huge salad fan....I love veggies it's just I feel too much like I am on a "diet" when I have salads and I just don't like that lol But I think this would be great in a wrap!

Wouldn't ya know it! I snarfed the last of the spinach yesterday for a salad at lunch. LOL This looks so great, Roni. I've never tried red curry powder before so when I'm grabbing a new bag of spinach, I'll pick some up. Thanks for posting this!
