    Simple Chicken Tips with Gravy

    "Tips" as in pieces. I just thought it sounded like a cool name and frankly, I didn't know what to call this quick creation. I made it up on a whim and to my surprise it's become one of the husbands favorite new meals. Even the toddler ate the chicken without complaint (well... with a little coaxing but I'm blaming that on his age, not the dish.) 🙂

    As always I'm going to share how I make it and it serves the 3 of use perfectly. However, there is more then enough gravy to add another chicken breast or two to get even more servings out of it if you're family happens to be a bit larger. Remember it's the idea that counts, not the specific recipe. As I always say... "Take it and run!" 🙂

    Ingredients

    • 1 small sweet onion diced
    • 2 boneless chicken breasts with all visible fat removed and cut into chunks (about 1lb)
    • 1 can healthy request or fat free cream of chicken soup (10 ¾ oz)
    • 1 tablespoon Worcestershire Sauce
    • 1 teaspoon instant coffee grinds (mostly for color and to deepens the flavor - you could use a splash of "regular coffee")
    • ½ teaspoon gravy master or other browning agent
    • non-stick cooking spray
    • Kosher Salt & Pepper

    Instructions

    Heat a skillet over medium-high heat and spray with non-stck cooking spray. Add the onion sprinkle with kosher salt & pepper and cook until just turning transparent and starting to brown. Add the cut chicken. It may stick, just leave it for a minute to give it a sear then toss in the pan a few times.

    Once the chicken is brown, pile it in the middle of the pan. Pour the cream of chicken soup on the chicken. The pan may be too hot, which is why you dump the soup on the chicken. Now, fill the can about ¾ with water. Give it a stir to get the soup that stuck and pour it in the skillet. Stir it until dissolved. It'll look gross for a bit until everything dissolves. Stir in the Worcestershire Sauce, coffee grinds, and gravy master. Bring to a boil then cover and lower to a simmer until ready to serve.

    Use the gravy over noodles or our favorite, Creamy Mashed Potatoes and serve with your fav vegetables! 🙂

      Sorry Shelly - I don't know. It's gonna be pretty high with the soup. Even the "healthy request" is pretty high. And then it depends on how much salt you use.

      Ok thanks Roni, I think I will go ahead and try it. I'm going shopping tomorrow to the natural store so I'll see if I can find a lower sodium soup and try it out. If I do, I'll come back and post!

      This looks really good! They use to search a turkey and gracy dish over mash taters when I was in school, that I just LOVED. This reminds me of it.

      Do you by chance know how much sodium is in this?

      I think this dish is just great! I too had never thought of adding coffee to gravy....but then... I now add juniper berries to steak & kidney pie! Another learning curve ;0)

      does the gravy master thicken it too or just brown it? and is that liquid or a powder? i don't think i have ever seen it..

      Ahhh just the chicken and gravy. I separated it as you can top it on anything you like. But with my potatoes it only adds another 190 cals and that's for a cup of potatoes! I don't even have that much on the plate! I have to admit... it was yummy! 🙂

      Man, that makes me wanna lick the screen! I'm such a gravy whore. Haha. Does the nutrition information just cover the chicken & gravy or does it include the mashed potatoes and peas? At any rate, I WANT THAT!

      In this case it does. It really helps change the "soup" into a "gravy". You can taste it but as I said it kind of depends the flavor.

      hehe...you really like adding coffee to gravy, huh? I have not tried that. Does it seriously alter the taste or will it be missed if I skip it? This looks really good though. I am sure this is something my husband would go for too. He is stictly a meat and potatoes kind of guy 🙁
