Simple Red Cabbage Slaw with Chia Seeds

Life is full of compromises. Sometimes you have to give a little to get a little and that's what I did for this dish.

I wanted my boys to eat some healthy cabbage and chia seeds and in exchange I used their favorite store bought dressing as a bargaining chip. It worked like a charm! We've had this dish at least 3 times this summer.

Of course there was some coaxing the first time, but once I told them "Daddy's dressing" is in there, they ate it and realized, the liked it!

Last night I made it alongside their favorite grilled chicken.

This time there was barely a peep about the purple side dish with the weird seeds. They both (baby not included, more on that later) happily ate my now go-to slaw.

Simple Red Cabbage Slaw with Chia Seeds I absolutely love it and will be enjoying the leftovers with my lunch. The chia seeds are much like poppy seeds, adding a great texture. The dressing adds just enough flavor and if left to sit, wilts to the cabbage every so slightly. I just let my 18 year old baby sitter try the leftovers and she decided to have it alongside her lunch.

Here's how I make it…

  • 1 small head of red cabbage (about 350 g when shredded)
  • 1-2 carrots grated
  • 3 tbsp chia seeds (32g)
  • 1 tbsp apple cider vinegar
  • ½ tbsp honey (10g)
  • 2 tbsp store bought creamy Italian Dressing

Put all ingredients in a bowl.

You really can't get much easier than that!

We eat it right away but you can let it sit in the fridge. It does let the dressing soak in and wilt the cabbage a little.

Dinner really was great even though it looks like I'm forcing him to take this picture. LOL

He ate his whole serving. Little Bean, however, immediately pushed it off his plate.

Which was ok. He still ate sweet potato and chicken. I'll just keep offering it and sooner or later he'll come around. 🙂

    Donna - I found them in the rice isle by the coucous and such. They seems to be expanding the seeds in that area in my local stores anyway.

    As for you WW questions there are so many variables I couldn't really advise beyond keep trucking! If you stormed out what were you going to do? Hit a drive thru? Remember the changes you are making in your diet aren't just to see a lower number (at least that shouldn't be the only reason.) If you are close to the the last 10 are way harder than the first. If you aren't close then start change things up a little. Don't just get angry and walk away from the lifestyle change. There should be no going back now. You're down 50LBS!!!!

    He says he only likes Kraft. HOWEVER, I routinely buy the generic and put it in the kraft bottle and he's none the wiser. 😉

    Where would i find Chia seeds? Sounds really yummy! Would you be able to answer a few qustions about W.W.? I join weigh watchers two years ago and have lost 50 pounds. I have been stuck at the scale for months now, and am at a loss as what the heck i'm doing wrong. Peopleat WW say i might not be eating enough!! I have been tracking and have stuck to my points and i GAINED! I almost quit and walked out i dont know what i could do. just wondering if you have any advice. Thanks~
