On Taco night - ditch the shredded cheddar and instead stir in 2 wedges of the Queso Fresco & Chipotle Laughing Cow into the meat at the end of cooking. It makes it creamy, moist, cheesy and DELICIOUS! Since the wedge is only 1 point, and I'm only eating a small portion of the meat - it turns into less points than eating the shredded cheddar but so much more flavor! Yum...

I couldn't wait for Taco night. Instead, I decided to make a single serve taco inspired wrap for lunch today. I happen to have 4 oz of extra lean ground beef leftover from Salisbury Steak night we had a few days ago. I stored it flat and pulled it out for myself while husband and child had leftover Japanese--We went out to dinner yesterday.
In addition to the cheese I bulked up the beef with some diced onion and peppers. I also added a few of my own spices as well. The result was delicious and amazingly SATISFYING! I can't believe how full I was after this wrap!
I used a Trader Joe's Whole Grain Tortilla with Flax and added a bed of baby spinach to turn my cheesy beef filling into an overstuffed wrap. You can bet I'll be storing and freezing lean beef in 4 oz packages just for this meal. Makes a great lunch or dinner for one when you are in a hurry.
Here's how I made the filling. Use it in tacos, wraps, quesadillas, on even top a salad!
Ingredients
- 1 slice of sweet onion chopped
- ¼ of a large sweet red pepper chopped
- 4oz of extra lean ground beef
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried cilantro
- 1 wedge of The Laughing Cow Light Queso Fresco & Chipotle
Instructions
Heat a small skillet over medium-high heat. Brown the onion. Add the peppers and cook for a minute or two.
Add the beef and spices and cook thru.
Add the wedge of The Laughing Cow cheese and work into the beef. It will stick in clumps, just keep stirring to distribute. It will melt.

You can always add salsa to the meat. That's my trick when it starts to get too dry!

I'll be trying this one for sure. A time saving hint. I cook up a pound of ground turkey with onions, green peppers and seasonings all at one time and then freeze it. Then I scoop out a half cup or so for a quick add to soups, wraps and salads.
