I just made a quick, tasty one pot meal the whole family ate without complaint! And when I say "whole" I mean WHOLE!
The Baby, The Little Guy, AND The Picky Eater Husband!
Here's the story…I was in NO mood to spend a lot of time on dinner. The thought of chopping onion, dirtying a ton of dishes or even waiting for water to boil was not appealing to me at all. Unfortunately, I'm still responsible for feeding the family and I really didn't want to order in, so I hit the pantry.
The result was delicious! Chicken and potato smothered in a tasty sauce and with sweet bites of peas. All made in one pot and Yummmmy!

Once it was done, I pureed a scoop plus a few extra frozen peas to help it cool for The Baby. He happily devoured it! The Little Guy was a little hesitant about the potatoes and said he didn't like the sauce to which The Husband chimed in with a, "What are you talking about? It's delicious!"
I think I nearly fell off my chair. He NEVER likes one pot meals. He's not a big fan of potatoes unless they are mashed. He doesn't even like traditional stew! Who doesn't like beef stew? I mean REALLY?!?
Regardless he "loved" this so much he had two bowls. He NEVER has two servings. Ever. I'm just going to keep my mouth shut and count my blessings. FINALLY a one pot meal he likes! Oh and after seeing The Husband devouring his plate Little Guy happily ate his whole bowl. He just had that initial kid aversion to something new.
This ones a keeper for us, I hope it inspires you...
- 2 Large Chicken Breasts cut into chunks (Just over a pound)
- 2 tbsp dried minced onion
- ½ tsp dried thyme
- 1 10oz can of Healthy Request Cream of Mushroom soup + ½ can of water
- 2 tbsp Worcestershire Sauce
- 1 15oz can of whole potatoes
- 2 cups of frozen peas
Heat a large skillet over medium-high heat and spray it with non-stick cooking spray. Brown the chicken with the minced onion and thyme.
I'm not sure if it's popular so I thought I'd share my jar of dried minced onion.
I love keeping this on hand for lazy days or when I run out of fresh onion. Works great in a pinch!
Once there is no more pink visible on the chicken add the can of mushroom soup plus ½ can of water. Mix well and add the Worcestershire Sauce.
Drain the can of potatoes and cut them in half…
Another great pantry item for lazy nights.
Add the potatoes to the skillet. Stir to coat them in the soup. Continue to cook over medium-high heat until it starts to boil then lower to a simmer. Continue to simmer until it thickens, about 10 minutes.
A few minutes before you are ready to serve add the frozen peas.
Stir in and cook for another minute.
Serve and Enjoy!

You know what what be good? carrots! But you have to cut them small and add them to with the chicken so they soften a bit OR add frozen carrots slices. Try that and let me know what you think!
This recipe reminded me of another you had and I was wondering if you had a substitute veggie for the peas?! HE hates and won't touch a dish with peas...I usually go with broccoli but was wondering if you had any other suggestions! Thanks! (Just made your one peppered pork chop dish...he hasn't tried it yet but I LOVED it! :))

What an adorable post. It's really nice that you got them all to eat. It always me feel happy when I can make something that everybody likes. It's not easy though when you have limited time, or are just tired after a long day.

I made this today and didn't even finish reading past the ingredients....I saw it and thought of your slow cooker South Western Chicken and Blackbean one pot five use meal (or something like that) and made it just like that. It did turn out a little dry, I would use more soup (I did make it bigger). But it was delicious though and I didn't have time to do all your steps anyway. Love your site and visit all the time to check for new recipes. I do have one question.....why does your peach muffin recipe not come up when I click on it, I love peaches......keep up the good work
Sounds like Little Guy is going through a stage where he mimics dad lol. He won't do it unless he sees dad enjoying and doing it first. I bet you could also cut time, money and space by using canned chunked chicken too.
Looks great!! I thinking this would be great scooped into little ramikin's and add 1/2 of a flakey biscuit on top. Viola, instand mini pot pie :O)
